Dunking problems! PLEASE HELP!

so being a newby, i somehow messed up what was supposed to be a simple dunking. after the first flush from 4 brf cakes, i stripped all the aborts i could see, and dunked them in their jars for 12 hours....upon reopening the jars, i was knocked over by the worst rotting, moldy smell i've ever encountered. Suffice to say, i threw the buggers out....this might be a silly question, but i really don't know what i did wrong...i'm thinking i might of had to use a knife to cut aways at any sort of potrusion from the cake, or in other words, strip it down. does anyone have any suggestions or comments about how to keep my cakes from becoming contaminated during a ducking? otherwise, i'm just gonna do the straw tech from now on..

Being a newbie, it might just be the normal smell which you mistook. If you put your nose to it, it does have an odor.

I agree on the dunking them in a larger dish. I should use bottled water, but tap water has always done just fine...plus I've heard of cakes swelling up and getting stuck in the jar.

no, i didn't mistake the smell....it was NASTY!!! nasty nasty nasty....unless most people's cakes smell nasty after dunking, i'm pretty sure it was contaminated.

not being airtight sounds like it could work...please send more suggestions if anyone else has experienced this.

I tried dunking in a sealed jar once, when I reopened the jar somehow there was a vacum in the jar. It smelled nasty and the cake turned greenish blue as soon as the vacum sucked air into the jar and the water was drained. It did not fruit after that.

refridgerating during a dunk is the best option to prevent bacteria [smelly] from multiplying in the dunk water
