Homemade wine
    #7591986 - 11/03/07 06:15 PM (16 years, 2 months ago)

I just followed these instructions and I'm waiting for it to show signs of fermentation. My question, when I added the yeast the temperature of the mixture was about fifty degrees, would this have stopped the yeast from fermenting?

It should just fine, it will make the yeast work slower.

How starting temperature would it have to be to stop fermentation from the beginning?
EDIT
It looks like its working now. The balloon is getting up.

Does anyone have a guess as to what the alcohol content of this might be?

No more then 22-23% apv. As yeast can only produce so much alcohol, with out killing it's self.

its a simple matter to find out, you buy a hydrometer. measure the specific gravity of your unfermented liquid, and measure again when it is fermented. there are calculators online that will take the two measurements and give you a % abv.

I'll get a hydrometer after I start distilling. I don't really care very much about this crappy hooch.

I just started skimming over homebrew type articles so bear with me. I would think you want the jug/equipment as clean as possible to prevent bacteria growth. Or is this not an issue because of sugar content? Basically, how safe would this be? I think I read somewhere that u either end up with wine or vinegar. Could this make someone sick? Enlighten me.
On a side note, any aquarium hobbyists here? You could direct the CO2 from fermentation into a fish tank to boost plant growth, might be fun to investigate.

hydrometers are like $8 it makes life a lot easier because you can see how your fermentation is progressing, and other things. do some reading and you'll see its a really great thing to have even just for messing around

using bread yeast will get you somewhere in the 8% to 9% alcohol range, provided you have enough sugars. after that, the strain of yeast (bread yeast) will die. yeasts that are cultured for use in wines can reach a much higher percentage, it just depends on what your looking for.

Yeah, I know I'm not using the proper kind of yeast. I'm a freshman in college and I just wanted some very cheap ethanol.

bread yeast isn't necessarily the 'wrong' type of yeast, it'll work.  other yeasts will just work better.  i've made more than a few brews with bread yeast.  8% to 9% isn't too shabby, i just never really liked the yeasty after taste.  if you want a good all-around yeast to use, try searching for lalvin 71B.  it's pretty cheap and you can order it on ebay too.
