I don't see why it would need to be airtight, once the cakes are colonized they don't need the same level of sterility as while they're colonizing. Personally, I'll be using a big (at least 10" tall) humidity dome over a cloning tray from my MJ cultivation days. It's about 2.5' long and 1' wide, and looks just like a nice terrarium but it only cost me $4 Canadian. I used to use it to root my MJ cuttings, and it stayed quite humid inside.

i'm pretty sure that this isn't all that important. i have a small plastic case that can hold about 6 cakes; it's not quite airtight and they always fruit as well if not better then my large igloo cooler. fresh air is actually really good for the mushrooms, which are constantly emitting co2, but it's keeping the humidity right that makes the air tightness of the container somewhat important. from your description, these should be just fine. note that i've never used anything but perlite, so this might not be true with other methods, but i wouldn't worry about it with an ultrasonic or something.

I have a 20 gallon tank, First i took about a gallon bag. (75% full) Then i added 1/4 cup peroxide, with 3 cups of distilled water , i mixed it around really good by mashing it around in the bag, then after i cleaned my aquarium really well i adde the stuff to the bottom , i then had this mix in another bag, vermaculite, brownrice, etc, and i heated the bag up ,leave open an inch, then nuked it on high for a minute, flipped it over again, did it for another minute, let it cool off in the bag with it closed for about 20 to 30 minutes, then added it to the tank and put the top on , i have no humidification problems at all, and if you have a different size tank go to a hardware store and have a plate glass lid made they only cost a few bucks depending on your size , Later...
