Leave jars sitting? Bad or no?

I started my jars today and went I went to go pressure cook em, only 8 jars fit. (It's a dumb pressure cooker) I'm still waiting for them to cool down. (The pot still feels really warm) But I have these other 4 jars sitting around waiting to be pressure cooked. Are they going to be ok if I wait until tomorrow morning?

I'd imagine as long as the holes are covered good so that no airborne contams can creep in...

My cat always just takes the old jars out of the pc with tongs then puts the new jars in the pc you dont really have to wait on them to cool before you take the first jars out and put the second batch in.

Take the 8 jars out and handle them like outlined here:

"There is an important detail to prevent airborne contamination entering the jars (the rye and later the rice-vermiculite!): Take a clean plastic bag and spray the inner side with Lysol. Rub it from outside so the Lysol is evenly dispersed on the inner surface of the bag. When the sterilization time is over, wait a few minutes for the pressure to build down to ambient. Then take a clean, folded cloth or thick gloves, open the cooker and transfer the (burning hot!) jars to the bag. Roll the rest of the bag together, so you get it pretty airtight. As the hot air in the jars is cooling down and its volume decreases, fresh (contaminated!) air from outside is drawn in. This setup will accomplish that the contaminants from the air set down on the wet bag surface and don't come into the jars!"

Chances are the contaminanst will survive, at least some of them.

When you strilize, it?s nearly impossible you will kill all of the contaminats, you allways kill a cerain procentage.

If your initial contamints count is very high, it won?t be propperly sterile after the pressure cooking.

Never let the BRF jars sit for more then a few hours non-sterilized.

About pressure cooker use:
The cooker doesn?t have to cool down completely but the pressure in it has to be 0 before you remove the lid (for obvious reasons) and you can?t speed up that process (in my experience) without water logging the jars.

My story:

I use 1/2 pints, filter disks, plastic lids and a tinfoil cap on the whole thing in an All American pressure cooker, it has a dial gage to read the pressure and a "wobbler" set on it's 15lb side.
I p-cooked for an hour and shut the burner off, got impatient and removed the wobbler to release the pressure. I don?t know all the physics of what goes on inside the cooker when you do that but my guess is the fast release of pressure created hi pressure steam in the cooker that got into the jars under the tinfoil and in the hole in the plastic lid effectively soaking the substrate in all my jars.

What I do now:

I shut the burner off and let the p-cooker set for an hour, its still hot but the pressure inside the cooker has had a chance to drop to 0 at its own rate leaving my jars picture perfect. After an hour I open the cooker and replace the jars with the next batch, add water if needed and p-cook the next batch.

This has not been my experienc. i have found that removeing the stoper for a few seconds 2-3 every few mins help accomplish this with out getting water logged jars. however not when it first starts to cool down once the presure is say at 65-70% about 15mins later. i am useualy able to get the jars out and a new batch started within 35-45 mins compared to 1-1 1/2 hours. Be careful i have burned myself on the steam more than once. now i use a thick face towel.

The problem resides when you try to let it all out at once. you need to do it slowly

Hi L3D!

That?s interesting, I just went for broke and pulled the wobbler till no more steam came out. I'm a night owl so I'm usually not in a hurry to swap jars out (except that one time) but if the need arises I will try the "pull the wobbler for 3 seconds" method and see what?s what. But pulling the lid before the pressure is 0 doesn?t sound safe so I will wait for that!

I just threw out my first cakes. They were covered with black pin mold. I don't know for a fact that it is what caused the contam. but as soon as the PC process was done I immediately opened the relief valve, opened the cooker, removed the jars and let them sit on the counter to cool. I used the traditional pf tek (4 holes covered with masking tape, top layer of verm, no foil lid, no foil/Ramsey seal).

Definatly wait for that. after you do the 3 second thing a few times you will notice that there is a point where the stem is comeing out with very little force at all. at this point i leave the wobbler off wait the 5-10 seconds for it to completely stop and remove the lid.

Hi there beauty . I usualy put any extra jar waiting for PC inside the freezer, it's like you do with food so it doesn't get spoiled, cold temps. reduce the reproduction and bloom rate of contams and even kill some of them. Before PCing i let the jars defreeze for about 1 hour.

My friends pet cricket often intentionally lets her jars sit for a day or two to see if they get contams. As long as you do something to prevent air exchange you'll be fine most of the time. To prevent air exchange she often uses foil caps, this has added benefits of allowing her to take the wobbler thing off immediately. The reason your jars got so wet from taking the wobbler off is simple physics.

When water is drop severly in pressure it is essentially the same as cranking the heat way up. You get a huge roiling boil that pumps water into every corner it can including the holes in your lid even though it's above the water line. A simple tin foil cap can save alot of problems in her experience.
