If you smell a mushroomy smell they should be fine.
If they have been attacked by contamination you should be able to smell it, because it sometimes (note: not all the time) smells awful. You'll know when it's a contamination most of the time! Of course there are some bastards that don't smell...

Good Luck!

You'll know if it's contaminated cuz it will have a sour, rancid smell.

MS, you pressure cooked them right? If so, thats a terrible loss... try sterilizing a little longer next time.

Pressure cookers almost always insure 100% contamination free cakes, unless your sloppy and introduce them after sterilization.
