I have a system that seems to work very well for me that will answer your questions. I have the holes taped AND the foil over the top of the jars during the steaming. Remember to keep the lids loose during steaming. After everything has cooled down tighten the lids and remove the foil. I wait long enough for the jars to reach room temperature then, using a Q-tip whipe the tape over the holes with rubbing alcohol. I thin push the needle through the tape and after injection add another peice of tape onto the hole in the tape that I've made. I've done this for about 3 years now and have only had 1 jar become contaminated.

There will be enough oxygen in the jar so you dont have to worry about that. In fact when you birth the cake the sudden increase in oxygen exposure is one factor that induces a full flush.

Why do you keep the lids loose - is it because steam needs to enter the jar - or because jar can explode from pressure? Won't water or condensation get inside the jar.
