Agar transfer question

I've read Stamets many times, and searched this site and others. . but my question remains unanswered:

So I have some beautiful rhizomorphic mycelial growth on agar from an excised tidbit of Plantasia Mystery fruit.

I'm ready to transplant this to a new dish.

After I cut out my section of growth from one dish to put into another, do I place it fur side down? or fur side up?
