Qestion on PC'ing

Hey guys,

i just got my new 23qt presto PC. aww im drewling just thinking of it. I went from a 4.5qt to 23qt so you guys can probably feel me huh? anyway i happen to be in somewhat of a pickle. my roommates might think its kinda weird that im using such a large PC. I was planning to come down to my restaurant and do it there on a propane burner. well when i was readin the manual on the PC it said to never use such an item. it said nothing fever 12000 BTUs. not i have no clue what that means but im guessing it means nothing that can outputs more power then 12000 BTUs. i was thinking of buying an electric burner, the ones that looking like a stove top. do you guys think that would work?

Just because the gas stove can go up to 12k BTUs doesn't mean you have to turn it up that high.  Place a steamer basket in the bottom of the huge cooker so you don't roast your substrate.  Use a medium-high heat to get the water up to temperature, then turn down so that you retain pressure without loosing all of the water in the process.

Hope this helps, and if I'm wrong...it never fails; someone will correct me soon.

I prefer a gas stove top burner.
Adjust heat accordingly.
Never been a problem for me.

But, that is with AA PC's.
Which are very thick.
You will have no problem getting up to 15 psi.

Only problem I could imagine.
Once @ 15 psi.
The lowest heat setting, might to TO HOT.
And, you could have trouble, maintaining 15/18 psi.
As it might tend, to run a higher psi on the low setting.

To remedy that.
Use the smaller gas burner.
Instead of the LARGE ONE.

As far as you PCing it at home, might be better then at work.

Keep it out of view, like in a large rubbermaid or just hidden.

Or say that you got it as a gift large as it is. Try to pass it off.

cooking its whats my problem at home. as for at work, its ok, its my restaurant and is equipped nicely with large steel sinks and counters. lots of sterilizing agents and equipment. i have access to it at any hour. with my old 4.5qt PC i used to have to play a balancing game with the pressure so i'm guessing its going to be the same only on a larger scale right? by the way how much water should i put in it?

I think the manual on those says that you want about an inch of water in there after you've got the jars in there. So depending on how full you fill it you'll need less than an inch to start off with as the jars will raise the water level after you put them in there. If you are worried about not being able to get the temp down to a low enough setting you might lose to much steam so it might be a good idea to fill it to around half way up the jars. With that PC you will hear the weight rocking around like crazy and steam shooting out then you want to turn it way down until the weight just barely rocks and minimal amounts of steam come out. For instance on my electric range in my kitchen I turn it to high to get it up to pressure and then turn it down to below medium right before you get to the low setting.

awesome. thanks for the info guys, its just as i imagined. it was the same game with my old 4.5qt on a gas stove. i used to get it way up then lower it to the lowest setting. every once in a while i would have to play around and balance the heat going in vs the what was going out. wish me luck guys i think ill be constructing a new large incubator and PCing 20 jars tomorrow! thanks again. :mushroom2: :mushroom2: :mushroom2:

Same here. Between medium and low is where to be to maintain 15PSI, at least on my 21.5qt.
