Jerky

There's a load of jerky recipes on the net but I was wondering if anyone could recommend any good tried and tested recipes to try out with my new dehydrator?

I've always used my dehydrator and just picked up a cheaper cut of beef. London broil from good, if I remember correctly.

For marinades, I usually mix it up, but it all depends on what taste you want. Teriyaki is usually good and you should probably include soy sauce as well for saltiness. I've used bbq sauce and all sortf of other stuff as well. Just mix it up according for your taste for the marinade. LEt it sit in the fridge overnight or for a day in a bag with your marinade.

When you're ready to dehydrate, make sure you pat each piece dry before putting it in so you don't have to worry about mold or anything. I usually sprinkle pepper or other spices (cajun, etc) on the meat before going in, too. I can't exactly tell you how long to keep it in the dehydrator, but it will be awhile. Keep an eye on it every few hours to make sure it doesn't dry out too much.

Also, some people like to cut with the grain of the meat for tougher jerky, but I personally like to cut across the grain for more tender jerky.

Nah, got some beef steak I'm going to use. Buffalos a bit hard to come by in the UK.

when you can, skirt steak and flank steak work well for jerky, I'm a little odd
when it comes to jerky, soy sauce, apple juice, brown sugar, fresh garlic,
honey, onion powder and worcestershire sauce, depending on the season I also add
fresh berries and usualy jalapenos or cayenne peppers.

leave it to marinade for 36-48 hours and since you're using a dehydrator try and
find a smoke flavoring, we have liquid smoke out here, it's not as good as the
real thing but... I prefer to actualy smoke mine as opposed to just drying it

1/2 cup Soy Sauce
1/2 cup Worchestershire sauce
2 Tbls ketchup
1/2 Tsp pepper
1/2 Tsp onion salt
1 clove of garlic

I just mix these ingredients and then marinate about a pound of 1/4 inch sliced beef for 12 hours or so and then throw it in the dehydrator. It's very good.

It's really easy and turns out a ton better than any store bought jerky.

What cut of meat and how much do you use for this amount of ingredients. :grin:

I recall using the liquid smoke when i made mine years ago....if i can find that dehydrator i will try your recipe.

you need no dehydrator, you just need smoke and a low heat, I use a fire and lots of wood added over several hours


solar dehydrator can be made with foil and cardboard and a little plastic wrap

You can also just use your oven with the door cranked open an inch  :smile:

I had to buy a dehydrator for the sheer amount of mushrooms I harvest  :crazy:

I'd use prisoner's recipe. brown sugar + honey + apple juice = for the win for jerky. plus the other stuff of course
