Now I'M making beef jerky

with all this talk of jerky, it got me thinkin about the last time i made jerky when i was about 14... so i got on top of it today

i even started 2 batches
here's my recies:
#1
1/4 c brown sugar
1/2 c terriaki
1/3 c worstishere
1tsp honey
1/2 tsp garlic powder
few sprinkles season salt
few sprinkles cayenne
10 drops el pato hot sauce
1 tsp chopped chili pequin

#2
1/4 c brown sugar
1/2 c terriaki
1/3 c worstishere
15 turns fresh cracked pepper
1tsp garlic powder
8 turns sea salt
1 tbs chili sauce (the asain kind)
1 tbs cattlemens bbq sauce
small dash basalmic vinegar
1 tbs mexican oregano
8 chopped red peppers
1 tsp minced garlic.


so i'm gonna toss it in the dehydrator tomorrow. but i have a question about it. my dehydrator ranges from 90ºF-170ºF, with variable fan speed. What settigs should i put it on?

My dehydrator says 155 for meats, but that is also as highest it goes.

hang them in the sun over a dowel or wire. Bring them in at night and lay on paper.

REAL jerky wasn't even flavored, probably just salted and air/sun dried. Or hung in the top of the lodge where the smoke and dry air would dry aand flavor it.

Well, I just got done with the huge batch I made.. Started out with over 12 pounds of roast, over a gallon of (secret, but very
similar to yours) marinade mix and ended up (after 20 hours in 2 dehydrators, 3 batches) with around 4 pounds of pretty awesome beef jerky.

I recommend 160 on high fan.

it's some round steak that was thin cut, it was on sale so i grabbed it. the butcher was closed as it was 630 in the morning, or else i would have looked at a roast or something...

1lb of each..
