chicken of the woods

Can someone give a positive ID as this being chicken of the woods? It comes up every year in this tree and I would like to try it but just want to make sure. ALso, any recipes or preparation tips would be appreciated. What's amazing is that this has fruited in spite of a super hot and dry period we are having in NE Florida.

I think ID's are generally better in the Hunting Forum, but that sure looks like Chicken of the Woods to me. I would eat it.

Thanks. From what I have read, there are no dangerous look alikes(??).
I agree it would have been better posting it to the hunting forum. If mods wish to move it there, I would appreciate it.

No; That doesn't look like chiken of the woods (Hen of the woods)to me. The kind i used to find were at the base of the tree and resembled a fluffed up chicken sitting on eggs. I'd look for another I.D

I could be wrong but I believe that the appearance has to do with the stage of growth that it is in (also chicken of the woods, Laetiporus sulphureus is different than Hen of the woods).
I believe that these may be young and that they get more ruffled as they age. However, I am not sure so that's why I posted. I think I read that there were no look alikes.

I have seen an orange one growing in the shade on an eastern exposure. It was very tasty.

Here's one that doesn't look appetizing:



"The Sulphur shelf, Laetiporus sulphureus, is a stalkless bracket fungi. This means that you find it as often overlapping fanlike shelves on the trunks of trees. It is bright yellow-orange to orange, and can grow quite large and lovely. It has pores rather than gills. Some people find this mushroom causes them gastric upset, whereas many people enjoy them without any untoward effects"

Sounds to me like you were finding Hen of the Woods (Grifola frondosa). That is most definately Chicken of the Woods.

Just pan fried some of it with butter and man was that good! I am surprised that this is not cultivated as a gourmet mushroom. Gonna fix some of it with risotta next now that I see that it didn't kill me or make me sick.

Let me say that on MANY occasssions have I accidently referred to Sulphur Shelf (Chicken Mushroom) as "Chicken of the Woods". For some reason, my mind tries to cross 'Hen' of the Woods with 'Chicken' Mushroom and that's the result!

Common mistake, and luckily both are edible. Be aware of two things before consuming:

  • I have a few sources that say sulphur shelf growing on locust, eucalyptus, and conifers, have caused reactions in some foragers including swollen lips and gastro-upsets, so I would sample first, and then cook the rest later.

  • the newest, soft tissue is best for eating. The closer to the base the flesh is, the less desirable the texture.

  • many claim that frying sulphur shelf toughens the texture, so I assume there are better ways of cooking it?

  • there are white pored, and yellow pored varieties - the yellow pored is less desirable, but still allegedly a delicious mushroom.

    Anyway, nice finds bud.

    Sulphur Shelf, Chicken Mushroom and Chicken of the Woods are all the same mushroom (Laetiporus sulphureus.)

    The common name for Laetiporus sulphureus has always been 'Chicken Of The Woods' here in Britain, don't know about the States :shrug:

    As mentioned, the scientific name is Laetiporus sulphureus. If you look at my original picture, this was a young specimen and the most recommeded time for eating. I was able to cut off the outer 2/3 without it being too woody. I think with the more mature ones, you need to use more of the outer fringes (can't cut as deep etc.) Also, as mentioned, it needs to come from less aromatic woods - like oak etc.

    This just goes to show how using common names of mushrooms can sometimes be confusing.

    Chicken of the woods and hen of the woods are different mushrooms...there is even another mushroom that is commonly referred to as the fried chicken mushroom  that is different from both of those.

    Chicken of the woods (chicken mushroom)(sulfur shelf) = Laetiporus sulphureus

    Hen of the Woods = Grifola Frondosa

    Fried Chicken Mushroom = Lyophyllum Decastes

    What you have in your pic is Laetiporus sulphureus.

    lol...the guy that gives out the common names must really love chicken. :smirk:  I love both chicken and hen of the woods, but I don't find anything related to chicken about either, except maybe texture.

    Found this on my trail run this morning...is this what I think it is???  If so, would it still be good tomorrow morning?  New to wild mushroom collecting and want to get it right.  Found in Rhode Island, by the way :smile:
