my PC sucks. i am going to order a new one but it will prolly be a bit till i do. now the reason my PC sucks is there is no psi gage at all. i can order one but it would be like 45$ all said and done and screw that ill just get a new cooker.
soo anyway any good way to estimate 15 psi. I'm pretty quick and i cant think of one but maybe someone else can.
also is there a danger of over cooking. and is there a danger if i run this thing on high of it blowing the fuck up?
i usually just run it on high till its pouring out steam from the top and then take it down to a moderate flow of steam. but i think this is why my rye is always getting contam. it may not be getting all the way up to 15 psi and not getting the 250 degrees it needs.
anyway just wondering if anyones got any good ideas.

typically the "de facto" standard for a PC is 15psi... MOST follow the convention but its not a garuntee
there's the splash test... splash a few drops of water on the lid and it should instantly boil and bubble away... that's how you know its getting up well over boiling temp... if the water sits there for more than a second or two its not getting hot enough
and yeah there's always a risk of the thing blowing up. there's supposed to be safety valves to prevent that, but you'll only find out if its functioning correctly when its too late (although if you see steam coming out, chances are it is working.)
what kind of contams are you getting? molds are killed relatively easy, even with plain boiling... if you're getting molds they're probably coming from elsewhere. bacteria is another story, and then you need to pay attention to your 24h pre-soak, the point of that being to germinate the more heat resistant bacterial endospores so that they're easier to kill off in sterilizing

so you don't have the weight on top? without that i can promise you that it isn't reaching 15psi; as the steam pours out it is balancing pressure with the outside. the weight works by forcing x amount of force (15psi in this case) on the hole, and when it steams out it is because the steam is pushing a higher force out than the weight. if your PC is not the weight kind then disreguard my post.

Buy the correct weight for it.
Otherwise you won't get up to a very high psi, and even if you did, all the steam would let out and your pc would dry out rather fast.
Pressure cookers are just that, PRESSURE cookers, without the pressure...you've just got a pot with a badass lid
