I always check my Pressure Cooker gauge. If you have one, you should be using it.

I talking about having the gage pressure tested between batches.

You shouldn't be using the gauge for anything critical; as far as I'm aware Presto, Mirro, and every other manufacturer explicitly tell you the gauges are there only for a quick visual read on pressure. The rocker is, for obvious reasons (thanks, mr. boyle!), the definitive pressure measure.

let me be more clear. In the PC's instructions it says to take your gage and have it calibrated in between using it.

I don't....I go by the rocker. High until it rocks and then cut back to medium

I have several All Americans. Every gage is off a bit here or there. They all read different things, I don't bother looking at them much.
I just pay attention to the weight. So no, I don't calibrate mine, nor do I see a need to. I don't even use them really.

What if your petcock doesn't rock when it hits 15 PSI? I have a very old pressure cooker, National No. 7. I can see no noticeable difference when it hits 15 PSI by the guage. I have always gone by the gauge and assumed the gauge is mostly accurate, because when the gauge hits 20 the top gets lifted and it starts venting. Assumed if the gauge was off, it would be off at the 20 mark as well?
My rocker may not rock due to the fact that its always sputtering along? Not sure.

Thats totally it, well it has black wooden handles I had an even older one, but the seal eventually went on it and the handles cracked so I gave it up and just use this one now. Don't see how it could explode as long as the vent pops when it reaches too high a pressure, which it does. Also in the center where you cant see it in that picture is a safety release seal, never seen it happen but I imagine it pops right out at some high pressure.

Cull--
That's the entire point of this thread...your rocker isn't "malfunctioning", it relies on a basic precept of physics. Your gauge however, needs to be calibrated; you are not reaching 15 psi.
In related news, you have to be batshit insane to be using that thing.

Why do you think its not getting to 15 PSI? If its getting enough PSI to pop the entire rocker up and vent as its supposed to at 20 PSI, then it has to be hitting 15 PSI. I have just gone with the assumption if the 20 PSI safety feature is working at 20 PSI on the gauge, then it should be close to the gauge at 15 PSI as well?
I have sorta looked at new ones, but they seam flimsy by comparison to mine.
