Store Mushrooms on grain

According to a guy that works in a mushroom farm, they grow their mushroom's on grain - such as rye - and clone from one mass individual. does this sound right??

I have two local mushroom farms near me, they both use the same method. Pasturized straw is seeded with rye grain spawn and cased with a buffered peat mix. They both make the spawn off site for sterile reasons, so I'm not sure about the cloning, but judging from the uniformity of the flushes, I would assume they used cloning techniques.
