Best way to pick the shrooms?

I've got around a dozen mushrooms growing on a large rye cake, some of them are ready to pick, the trouble is they tend to grow in clumps with other smaller mushrooms in the clump. If you start ripping out the big ones and leaving the smaller ones it tends to encourage mold.

What's the best way of picking off the big shrooms from a clump of smaller ones? Clip them with scissors or something?

An exacto knife will do it. I don't believe this will encourage mold. (my experience) I prefer to let the whole clump mature on it's own. Yes. some shrooms will be past their prime, but the yield will be better.
