Dunk and Roll

I'm about to berth my first cakes(PF-TEK) People have been telling me to dunk and roll in dry verm. But all the pics I see in the galleries of fruiting cakes have no verm stuck to the outside of them.WHY? Also in some of the pics the cakes don't even look fully colonized.WHY?

Dunk/roll then mist it till it's saturated well...

The ones that have no verm....Simply weren't dunked and rolled, they just Birthed them as they were...

I think you're looking at cakes that have been rolled....I don't think you understand the PURPOSE of dunking and rolling

Dunking - Extra water

Rolling - The Verm. holds extra water for the cake, it is non-nutritious(like a casing layer) , you don't want it to colonize But you don't want it really thick either...

Tahoe proved (as well as Agar) that you don't want veg. growth all over the place...

Is there something wrong with that? Everyone seems to be bent on me doing the dunk and roll but the pics I see of the undunked cakes are BEAUTIFUL!!!

i never used the dunk and roll when i was doing cakes. although that was a few years ago, and perhaps nobody had thought of it then!! :-)
