First flush... When to harvest?

I have my first flush starting. I was wondering when to harvest (cut) the flush? I have one shroom that is 2" long and it looks as if it is going to open soon, but all the rest are small 1". My question is: Can I harvest just one shroom at a time, and let the other shrooms keep growing? Or is it best to harvest all the shrooms off the cake at once?

I believe that for a even second flush it is always best to pick them all off at once but picking one off at a time is never a problem. The key is to pick all of the mushrooms when the majority of them have grown to the size that you want them to be. I'm sure you allready know this but shrooms picked just before the viel breaks have the highest potency. Shrooms picked just after the viel breaks have just about the same potency and look a little nicer. Just my two cents.
