odd flush, harvesting question (pics)

This is my friend's first casing attempt:

[She did a multispore innoculation of Acadian Coast on whole brown rice, crumbled, and cased with sterilized coconut fiber.]
As you can see, there are many fruits at many different stages of development. She wants to harvest the mature ones, but does not want to harm the young ones in the process. What should she do?
Her other concern was that the casings are shrinking, and she wants to know how (or if) she should add water. Prior to pinning, the cases were misted with a solution of hydrogen peroxide and distilled water. However, now that many pins are present, she does not think it would be a good idea to mist. The chamber is quite humid, but surely the casings are losing moisture.
Your advice is greatly appreciated. Please reply as soon as possible, because, you see, English is not spoken on my friend's native planet, and all text must be run through an elaborate translator in order for her to understand it.
She thanks you all in advance

Harvest the larger fruits when they are ready. Within 24 hours harvest the rest, even the pinheads, as they will most likely just abort. Patch the casing with more casing material where needed. Mist the casing. Nice looking fruits !

First of all, thank you for your fast reply, and for the compliment
However, my friend is still unclear on what to do right now. Several of the fruits have already reached maturity. She would have already picked them if not for the concern of the smaller ones so close to them.
So, what she would like advice on is whether she should harvest the mature fruits now, or if she should allow more time for the others to develop before touching anything (and if so, how much time?).
Everyone's comments are welcome.
She thanks you, again

you will no doubt pull up some smaller fruits/pins while you harvest the older more mature fruits, this however cannot be avoided, but its better than letting them rot and ruining the whole thing.

A note as to what to do about the casings pulling in from the sides (ie, shrinking). Do NOT mist it to make it even out, you'll probably end up over-misting it, creating a nice den for contams, thus detroying your casing. Add more of the casing mix you used and simply fill in the gaps.
