Question sterilization questions!

1) Are canners (the one that seal your canning jars) ok for 1 hr. steam sterilization? The lid doesnt seem airtight but I will weigh it down!
2) Can I stack jars?
3) What are you opinion on the small, fat jars? Are they any better than the tall, skinny jars?

there 2 kind of canners- the waterbath kind (thats a biiiiiig pot basically you put water in and put a lid on, no special seals or anything...) and the one you think of when you see a pressure cooker (absolutely sealed, with weights and valves- its just larger than a pressure cooker so you can "can" large jar-worths in it)...

assuming you have a water bath canner (the one thats just a really big pot- no weights and such), you will want to follow the directions like youre boiling jars, not pressure cooking them. i dont think stacking the jars is a good idea- because the water bath works by steaming the substrate AND the heat sterilization (the jars sitting in water reach the same temp as the water)... the air above the water wont reach 212 (boiling) so i dont think it would work. just my opinion though.

the small fat jars are cool :) just cant find them anymore. they seem to colonize more quickly than the tall ones... but i dont know if they really do or not. caking it, for HQ most cakes fruited from top & bottom, so youd have more surface area to work with on a wide mouth jar. doesnt matter if youre casing.
