Quart Jar RiceCake Method

Hello Everyone,
I am using the Quart Jar Rice Cake Method outlined on this webpage from The Shroomery:

Anyways, my jars were innoculated on or about July 10th with PC Cambodia. My friend and I followed this method to the letter. Now, two months later, there isn't much to say for it. There was alittle but of blue/gray discoloration, but as the wepage says that shouldn't be a call for alarm and is normal. Other than that coloration there is no contamination i can find anywhere in the jars.
They look perfectly fine and hydrated, and i've been taking spectacular care of them even though i've begun to lose faith in them. The mycelium growth is immense, and has grown over all of the substrate (rice). All the mycelium growth looks as if it's just about to fruit, but it's looked that way for more than a month.
Temperature has been fantastic, never falling below 60 or above 90, hovering just about 77 or 78. Humidity has been good as well, I've put a small amount of water in the bottom of the container so some of it could be evaporated into the body of the box.
Someone please help me figure out what is wrong with them. I'm at my wits end trying to figure it out on my own. What I'm afraid of is that they will consume all of the growing substrate and die without giving me one fruit for my efforts.

You may have grown a non fruiting strain, or even more likely, A jar full of cobweb mold.

I can't believe that would happen without looking out of the ordinary to me. I've looked at my babies at least every other day and 2 times a day at the most.
Describe to me what cobweb mold looks like, I'll tell you if it fits the description.

you have a fully colonized jar of mycelium? id not wait for it to pin invitro personally; some strains dont and/or have a hard time doing it. if the rice is fully colonized, case it. then youll see if it worked or not. plus, generally brown rice is used in recipes, whole and ground into powder- perhaps the white rice is not sustaining the mycelium well enough for it to fruit invitro- which again would lead to the conclusion of casing it to see if it works or not.

I'm just throwing out options right now.
In a jar it is hard to discriminate between cobweb and mushroom mycelium, unless you really know what they both look like. It can look anywhere from white to grey or brownish white. It grows very cottony, never showing rhizomorphic growth. It grows, very fast, and initially looks a little sparce in growth. I'm not saying you have it, but its possible.

Problems Pinning! [Re: Abudiwa]

Well I cased it on 9-12 in potting soil (the only thing I had around, my other jars are getting perlite/peat this weekend). After that I covered it and let the mycelium recolonize in the dark.
On 9-19 the mycelium was peeking through the soil, and I initiated pinning temperatures and r/h. The temperature range has allways been in the pinning range, and the r/h has, I assume (my hygrometer broke, i'm getting a new one), been at 95%-100% because there is allways "dew" all around the inside of my container and my perlite is still wet.
I fan them 3-5 times a day, and I spray the walls of the container and the perlite when I fan. Also, I give them about 11 hours of light a day. I heard that closer to 12 hours a day is better than 8 hours a day (does that difference even matter?).
It is a week after when I initiated the pinning process. I havn't seen much of anything happening this week. Should I have seen anything happen in the past week? When should I start worrying for their well-being? Is there an amount of time when I should lose hope in them?

Casings take about 2 weeks total from start to pinning. Hang in there.
