casing is artificial dirt. some species won't bear fruit without it. cubensis is not one of them, BUT. . .

casing acts as a barrier to contamination

it acts as a reservoir of water to nurish the mycelium

it supplies a humid microclimate that helps the myceilum flourish

in short, casing is a layer of inert stuff you cover the growing medium or substrate with.

some species have evolved an elaborate way of knowing when it is a good time to spred spores and make baby shrooms, and they get their clues from the casing, hence, the use of the casing to encourage the fruiting process.
