Ok i had a quart jar that was done with bird seed, i had it in the attic cause i thought it was too moist, i check on it, and it looked like it had colonized but it look like really dry, soo i take it outside and dump it out and there is all this wine smelling shit, it was yellow and it looked like mycelium. It was really strong smelling! what could it be?

That's a contamination... Any really strong "wine" smell is bad, throw it out.

put on glove, and "case it" in your backyard.... amke sure that teh top of it is buried no more than .5 inches..... u'll be fine in a bit. it should flush so long as u keep it wet enough...... i've done this to horribly infeted casings/cakes, and made out like a bandit
