Most of what Stamets talks about in GGMM for growing shiitake involve using sterilized bags. Is their a way to use trays to cultivate the shiitake mushroom? Could wood chips be pasteurized and "spawned" as with ps. cyans? thx
The mushrooms that fruit off logs don't do very well in open trays. You could improvise, though. . .there are nice pictures of oyster mushrooms, another log-fruiter, fruiting very well off of trays that were covered in perforated plastic. So you could imagine something like a small rubbermaid container, filled to the brim with sawdust/chips, and the lid with small holes here and there. You'd want to cover these holes during colonization, and uncover when ready to fruit. Not a tried method, just an idea to get you thinking.
Regardless, you'd want to follow TMC/GGMM recipes for the substrate if you can't use actual logs.
