Hello all, thought I'd share some shiitake love. This harvest is from 6 blocks total, each weighing apporx. 7-8lbs. They are sterilized sawdust mixed with approx. 10% bran by volume, and a small amount of molasses(the same formula as our Shiitake Patch!). Here are some pics:




And finally, the harvest! Each bag is 1/4lb dry and the tray is approx. 1800g wet. Still have the one block(top left in the previous pic), to harvest!!





Shiitakes can be great indoors, can't wait for spring though!!

Nice, how do you like to prepare them? I think they taste pretty good with any kind of salty sort of food.. or in stir fry that can take soy/teriyaki sauce.

Nice grow you have there Mycoshack...

Shiitake is one of the tastiest I know that goes very well with sweet soy sauce.

Yesterday I tried this recipe "shiitake risotto":

Lots of shiitake (400 gr)
400 gr risotto
100 - 200 gr almonds
2 onions / spring onions
400 ml of vegetable broth
1 bush of parsley
olive oil 5 tbl spoons
salt & pepper
smoked cheese

Roast the almonds a bit for better flavor in a frying pan. Put the roasted almond aside. Add olive oil to the frying pan, add shiitake and stir well until they are done and put the aside. Again add olive oil to the frying pan, add chopped onions, stir well. After 2 min add risotto rice and fry them along with the onions for 3 min. Add half of the veg broth and add the other half when all broth has been absorbed by the rice. When the rice is done, mix it with the almonds, shiitake, cheese (I prefer in cubes) and parsley add salt and pepper and enjoy.

Goes well with a strong flavored dry white wine....

Nice, I won a shiitake print in the scavenger hunt contest and am anxious to grow them- I read that shiitake's take a long time till harvest (several months) is this true? What was your total time to fruit?

Some strains take 35-45 days while others take 3 months or more. The ones who takes longer time are usualy easier to get 4-5 flushes with less contamination. The fastest ones are usualy hot temp. weather shiitake.

^exactly!!

The strain I have is considered somewhat of a wide-range. It's listed fruiting temps are 55-70. I have found 60-65F to be the most ideal temp. It's definitely a 35-45 day strain!

I usually kept mine in the basement.. It was 60 something down there most of the time, sometimes cooler... It was probably too cool, as there were some surfaces of the blocks that didn't get as many fruits.

I'd have to say random, because I don't remember the specifics on that grow. It took place two years ago or something like that :justdontknow:

A friend from the shroomery sent me the culture.

I can remember cooking them up in an asian style stir fry, and drying some of them.. I  :heart: shiitake.  :cool:

It is defenetly a good flush. :thumbup:
The hardest part of growing shiitake inside is getting the third,4th and 5th flushes whithout greennmold spreading on the block. I've rarely seen greenmold on the first flush. Shiitake is considered at is best when the caps are still well inroll. Your's looks a little bit to old. Woul be a good thing next time to harvest them younger.

What else would you expect from a wal mart... I would imagine it's just not the same as fresh harvested.

wow, I have never seen anything other than brunnescens at any Wal Mart.      I would imagine they can't be good though......Shiitakes seem to have a short fresh shelf-life(IMO), and the richness of them disspates quickly.  I have actually come to prefer dried and rehydrated shiitakes as they are oh so convenient and seem to have a fuller, more intricate flavor to  and aroma. 

Anyway, looks like we've got another 12 blocks getting ready to be birthed.............updates soon! :smile:

Eat fresh shiitake fried with a little butter for a quick taste when you get the chance.Thats how I had one and now i have cravings for them!They are good with so many things even raw.

More intricate flavor and aroma than when freshly picked or than when a few days old? If I can preserve mushroom taste by drying as soon as possibe that's interesting, I could grow a lot more at a time
