so what does it mean when the stalks start splitting? AFOAF has noticed that on amushroom that was growing sideways against the bottom, the stalk has been splitting all the way up to the cap.

Many things can cause this .
In your case it may be lack of fresh air .
Mushies tend to twist and knarl in high Co2 enviro . The twisting and turning of the flesh tears it open .
It could be lighting from the side casuing them to lean way over thus stressing the flesh causing it to tear .
In some instances I think but am not sure could be some sort of bac .
Could just be a simple mutation .
Many things ..........
Pick it soon before it starts to rot .

Low humidity would be my first guess. Sometime after the shroom was about half grown the humidity droped below 70% for 12 or more hours. This has happened to me once or twice in the early days. The shrooms responded by caps and stems splitting
