pins in jars

my friend has 4 or 5 jars that are about 90% collonized and when she wasn't looking they started to pin inside the jars. she was going to case them but is now confused on the issue. anyone have any ideas? thanks!

why dont you tap the cakes around in the jars some... if you haven't tapped them down do it... you may have 2 much c02... anyway.. your time souns good a month to 90% is pretty descent... move your cakes around inside the jars as much as you can without doing damage and sit back and foggedaboutit... peace

she thanks you , and has one more question if you don't mind: the jars were turned upside down like two weeks ago and she noticed an orangeish color right where the mycilium stopped. the cakes look a lil dry and there is condensation on the jars. does change anything?

hmmm.... i dont know ... it's kind of late to actualy DO anything about it ... i guess just ride it out... and try to get rid of the condensation.. if there's alot of it- it might be the thing causing you discoloration... i realy couldn't EXACTLY tell youwhat it is because it could be so many things... the shrinkage of the cakes (i think this is what you mean by them looking a little dry) is normal... does the orange spot look slimy ??? smell the jars(thru your innoculation holes) do all the jars smell the same???

they all smell A Ok, and it doesn't look slimey. she has seen this before and she just cut the top of the cake off and cased it. things went well with that one. these cakes are pinnin now and she is confused. thanks for all your help

if you still have tape over the holes, remove it & place your jars lid side down & try not to disturb it too much.
if you must birth to case, brand the uncolonized part instead of cutting it off.

o, yeah....if you must sniff the jars, try not to sniff too much...you dont know what can brew up in there..contams are fatal, to your cakes & even to yourself.

it sounds to me that yer jars dry'd out alittle during sterilization, this is usaully the case with haulted growth. when the substait uncolonized areas are dryish the mycl tends to stop and start pinning,

my friend hasn't had any problems sterilizing the jars. she has never dried them out but always followed directions word for word, however a couple weeks back there was a hot spell in her area and ever since then the jars haven't been right. knowing all this info in this thread, can anyone suggest a means of recification?
