Best time to harvest lions mane?

I’m growing some lions mane right now from a grow bag. I’m wondering when the best time to pick it? Right now it looks like a big head of cauliflower, it doesn’t really have any spines on it yet. Am I supposed to wait till they form?

Yeah id give it a couple days. I like to harvest young, when the teeth are about 1/8" long but some will let them go twice to three times as long.

For me younger means less spores and a better shelf life for slightly reduced yield

I've found that harvesting Lions Mane when the teeth are about 8-ish mm long yields the best quality for eating. Here's how I measure it:

I take a penny, and use a sharpie to black out a solid black bar right across Honest Abe's face. I measure the 8mm between his eyes and just barely above the date on the penny, and that's pretty much perfect. I hold my little Lions Mane growth-checker penny to the teeth, and if they're at least as long as the bar is thick, they're good to harvest.

It's a simple, no-cost hack that takes the guesswork out of harvest time for me.

I find that getting them at the stage I outlined provide a more consistent flavor. I've found that Lions Mane can, occasionally, be a little bitter when harvest *too* young, but also when it's too old, and the teeth start resembling many wild specimens. 8mm-ish teeth, for me, provides the best combination of flavor, texture, and yield.

That said, I encourage people to do what works for them, these are just my personal experiences.

I'm in the same phase of fruiting as well. I'm getting great size, but no spines yet. Probably because I'm battling air and humidity. Waiting for just a little shag and then I was going to harvest.
