Oyster and Lions Mane in Summer

During winter, indoor humidity is low, which means that if I try to give oyster and lions mane mushrooms the air exchange they want it becomes too dry and they die.

In summer, indoor humidity is much higher, so I'm sure I could allow more air exchange. However, I notice that most oyster species (except for pink and yellow oyster), as well as lions mane, have recommended fruiting temperature ranges that end at 75F.

What is likely to happen if I attempt to grow these at slightly higher temperatures - most of the time between say 75F and 80F, but possibly reaching 85F occasionally. Will the mushrooms refuse to fruit? Be much more vulnerable to contamination? Or will they simply not grow quite as fast?

Lions mane will be OK at higher temps provided you mist regularly, but oysters grow too fast and they won't have any meat to them. I only grow oysters in the fall-spring, and switch to other species when the weather heats up. In fact, oysters don't even do well in the 60's, preferring temps in the 40's and 50's to develop firm, meaty fruits.(A few strains are exceptions, of course) If you like oysters, you can grow H. ulmarius in the summer months. The cultures sold by aloha medicinals fruit fine into the 80s.
