I go with the cover method, but it is a personal preference. I cover until mycelium is visible peeping through the casing layer at more than one spot. I find this creates a more even pin set. But like Kast states, It also increases the risk of stagnant air, which can allow any contaminant spores to germinate and do there dirty deed. It is a personal choice, try both out when you have the time, and see what works best for you. They will both succeed, if everything goes well.

I cover and let colonize for 5 - 7 days. Better pinset and so far none have contaminated while colonizing.
