Experiment results from rapid substrate cooling.

I have often read posts regarding cooling of substrates faster than letting them cool at room temp. The responses I have seen ranged from yes you can do it safely to no the jars will crack and or will get contaminated. Below are the results of an experiment and technique of cooling canning jars of substrate in the refrigerator and freezer.

Things you will need:
Tupperware container with lid to hold your jars. (I used a kitchen container made by Rubbermaid that had a rubber seal on the lid. You will want it to be fairly air tight.)

Electrical tape

Filter disk (Tyvek will probably work as well as polyfill)

What you will need to do:

First you will need to drill or poke a hole in the lid of your plastic container. The hole I made for the experiment was 1/4 inch in diameter. Once you have your hole you will need to cut out a one inch piece of filter disk and attatch it over the hole with electrical tape. The reason for this is to keep out contaminants while you rapidly cool your jars in the refrigerator or freezer. The hole size and filter size do not need to be exact. It just needs to allow filtered air in. Now you are ready to cool your jars when they are done sterilizing.
The 2 problems you are dealing with when rapidly cooling your jars is that contaminants can be sucked in and or your jars will crack. The filter disk on the tuppperware container addresses the contamination factor. Cracking or "Thermal Shock" which is stress fractures caused by rapid uneven heating or cooling of a material will be dealt with by using water.
Once your jars have been sterilized and are ready to be cooled you will need to load them into the container. Once you have loaded them into the container you will need to fill it up with hot water up to the freezer fill line on the jars. This is right under where the lid screws on. The water keeps the glass jars cooling evenly so they will not crack or break. The hot water used in the experiment was from the tap, if your tap does not get that hot you can use the water left over from sterilization and then some from the tap. Next, before you put the lid on you should spray the underside of the lid where the filter disk is with H2O2 just in case and contaminants may be present. After the lid is on you are ready to place your container in the refrigerator or freezer to cool. Below are the results I got from pressure cooking 1/2 pint jars at 5-10 PSI for 30 min (I could not boil at 15 PSI at the time.)

Control Jar (Open air cooled)
Core temp of 1/2 pint jar out of pressure cooker = 210 degrees F
Core temp after 1 hour = 130 degrees F
Core temp 1 hour 30 min = 120 degrees F


Temp of the refrigerator = 39 degrees F
Core temp of 1/2 pint jar out of pressure cooker = 210 degrees F
Core temp after 1 hour = 115 degrees F
Core temp after 1 hour 30 min = 98 degrees F

Temp of freezer = 23 degrees F
Core temp of 1/2 pint jar out of pressure cooker = 216 degrees F
Core temp after 30 min = 124 degrees F
Core temp after 1 hour = 115 degrees F

Results of using warm water in tupperware and adding ice.

Temp of the refrigerator = 39 degrees F
Core temp of 1/2 pint jar out of pressure cooker = 210 degrees F
Core temp after 1 hour = 100 degrees F
After 1 hour temp was measured 1 handful of ice was added to tupperware for extra cooling.
Core temp after 1 hour and 30 min /w ice added = 90 degrees F

Cooling temp/times can vary. One way of reducing them is to find the coolest temp the water added to the tupperware can be without causing cracks. Also, using the smallest container you can find will help as well.

None of the jars contaminated and all went on to maturity. For added protection you could use filter disks on the jar lids as well.

interesting.
but, to make your data complete,
you should have posted/measured the core temps/etc. of regular jars coolong outside the fridge/freezer,
so we could compare to see if your tek really helps much.

I have BRF/Verm to waste, and was thinking about starting my own set of rapid cooling experiments. I think the major bummer about cultivation is the waiting for the jars to cool down.

My question is: at what temp do the spores die of heat? this would give a baseline for me to shoot for.

Heh. I dont know how I could have overlooked the control jar. Im currently running the same set up again so that I can get the data that was missed. Plus trying with cooler water. I will edit my first post to add the data in as soon as I get it.
