It's a good looking plant. I'll be letting more of it grow, probably slows other weeds from starting/ growing.

im making a broth, i put in 2.72 pounds of beef bones, it cost me like $12, i also threw in some salt and postassium, long pepper and bayleaf, also aplle cider vinegar to leech nutrients,  and 8 quarts of water, i have no idea if i have a good bone to water ratio, i also didnt bake the bones since they came frozen from the store, next time ill buy them a day in advance and thaw and bake them before putting in the pressure cooker

you only use 1 to 2 table spoons, you dont taste it

i tried to make a gravy using the recipe in this video as a base, but i either started with too much broth, or didnt use enough geletine, but it tasted delicous


in a pot i poured in some of my bone broth i made last night, in a separate bowl i put 1 tablespoon beef gelatin and some water and mixed it to "bloom" whatever that means, and put it aside, i constantly whisked the beef broth over medium-high heat, i added a sprinkle of white pepper and a sprinkle of dried thyme, while that was simmering i fryed up some eye of round beef in like 10 or 20g of tallow, the eye of round was cubed about 1.5 times biger then a die(dice from a game) after it was cooked i put the eye of round into a bowl, and poured the liquid into my pot of broth and scrapped the brown bits too into the borth, then i added the gelatin to the gravy and continued to simmer and whisk, but it never thickened up like in the video, so i just added a table spoon of butter, and then poured of a combination  of the eye of round and some cheese curds to make a "carnivore poutine"

the gravy was delicious, but it was basically as thin as water, but tasted better then gravy at some fast food restaurants, actually had an appropriate taste for putine i think, though some die hard quebecoi is probably yelling chicken gravy only

i had cucumber and tomatoes today too, with tuscan herb olive oil and red wine vinegar, the cucumbers were just a shitty grocery store mini cucumber, but my tomatoes were organic, pestiside free, from a farm, and i have to say they were 2x better then the ones from a grocery store,  but they were also 2x the price lol

Made a bacon blue cheese burger with a Cajun mayo

Was in a burger kick for a bit that has since ended after eating the best double smash burger of my life. 



Some Asian beef with garden pickled cucumber,  garden grilled shisito peppers, stir fry veggies,  and rice

I remembered to take pics this time!

I had a brat and a smash burger. The brat was one of ours and the burger was made with our sister farm's 90/10 blend of beef and liver/heart. Crisped up the buns in our lard for that extra blast of decadence.

It sounds like we're doing chicken Philly cheesestakes tomorrow so I'm gonna make it my gosh darn beeswax to remember to document it.

I made a mayo with butter instead of oil, I had made a avacafo oil mayo in the past but it tasted too green, I like this butter mayo a lot better, although it still dosnt taste normal like soybean oil mayo

Thermometer

1 114g stick of salted butter

1 large egg separated yolk and white

1 teaspoon djon mustard

1 teaspoon apple cider vinegar

Salt

Electric whisk (you could also use a immersion blender)

In a large bowl whisk egg yolk, mustard, apple cider vinegar and pinch of salt together


In another bowl melt the stick of butter how ever you want, but use your thermometer it needs to be 140f

Whisk.the butter into the egg yolk 2 table spoons at a time, once its mayo thickness add the next tablespoon of butter


Once all the butter is incorporated into the egg yolk, and its mayo thick, whisk the egg white back into the mayo, this is what will.stop the butter from solidifying in the fridge completely, it will.stay spreadable



Actually it solidfyied up more then I thought it would, its still softer then butter tho

I tried to make a rubaboo kinda and I think it was a mistake


In a pot I combined my last 350ml broth, 150ml water, 100g pemmican, green onion, bell pepper and raddish, and simmered for a bit

I took a sip while it was scalding hot and I'm not sure I like it, I have a big bowl to.eat


Traditionally its made with pemmican, water, flour/crackers, onions and potatos

Hopefully once its cool enough to eat it will taste better

It grew on me, I ate the whole bowl, although the liquid had a nice fatty flavour, the rehydrated beef crumble at the bottom of the bowl was a bit whack, but I guess that's where all the protein is, the vegetables make it feel like.its not all rehydrated beef crumble and fatty broth
