How about some chicken recipies?

My absolute favorite food is chicken, and could use a few more recipies, but heres one of my favorites:

Take a chicken breast fillet coat it in salt, pepper, itialian seasoning (the stuff i have actually looks like super dark green pot; i had to double check when i pulled it out of the cabinet) and cayenne pepper fry it up in a small ammount of crisco or blacken it in a cast iron skillet, or, even better, grill it.

Put on hamburger bun with lettuce, ranch dressing and BW3's Caribbean jerk sauce.

Chicken ala Francese

1 pound boneless, skinless chicken breast
1/4 cup finely grated mild Pecorino Romano ( parmesean will do)
1/2 cup finely chopped Italian flat-leaf parsley
2 eggs, beaten well
Flour for dredging (about 1/4 cup)
1/4 cup olive oil
1/2 cup dry white wine
Juice from 1-2 lemons ( approximately 1/8 of a cup, adjust to taste)
lemon slices
3 tablespoons butter
1 clove minced garlic

1. Split the chicken breast up into 4 pieces (if not already done) and place between plastic wrap, pound to thinness of your liking (ideally 1/4 inch, no more then 1/2 inch) and salt and pepper each side.
2. Dredge in flour
3. Beat egg and add cheese and parsley in shallow bowl
4. Heat oil to medium high in nonstick pan
5. Dip chicken in egg mixture on both sides, letting excess drip off
6. Add chicken to heated oil in pan and cook until golden brown, flip and repeat. Repeat for remaining chicken. Place chicken on a plate off to the side as they become done.
7. Pour oil out of pan and wipe moderately clean.
8. Turn heat to low...Add butter, garlic, white wine and lemon juice to pan, stir till butter is melted and you have a sauce.
9. Add chicken back to pan and toss to coat.
10. Garnish with lemon slices and additional parsley

Drunk chicken

Take a whole fryer and remove insides and wash real good like. Pat dry.

Season your chicken as desired - I usually do either a cajun or a lemon pepper. I like to season the bird inside and out. If doing the lemon pepper I take lemon slices and place them under the skin - adds a nice flavor and looks neato.

Take a beer of your choice (must be in a can - the cheaper the beer, the better the cooking flavor) and drink about half. heavily season the beer - careful, salt and beer makes a bubbly mess.

Insert the beer into the cavity of the chicken and place on the top rack of your BBQ. Cook until the leg meat starts to separate from the bone.

This is very easy and makes a very tasty, moist bird.

Paper Wrapped Chicken:

Buy teriyaki sauce,
cook it with some cornstarch.
Make sure you add the cornstarch
when the sauce is cold and then just
heat it till thick.
Take your chicken and whack it with
a mallet to slightly break up the
cell structure so that the sauce will
penetrate it and it will get more tender.

Get some pieces of foil proportionate
to the chicken pieces, coat the pieces
with the sauce which should be very tight.
Wrap it and bake for 45 minutes.

Serve the chicken in the foil.
When you unwrap the chicken the sauce
will have soaked in and yet should still
have made a glaze, and the chicken should
basically fall apart.

If the sauce doesn't glaze or is not sweet
enough then add some brown sugar to it
before starting this whole process.

Some Chinese type vegetables can be
added to the foil, or some potatoes.
Or you can just cook some on the side
and unwrap the chicken ans place it on top.
Sprinkle some toasted sesame seeds
or almond slivers on top and some julienned
cilantro for garnish.

when im lazy i take:

onion, diced
a few chicken breast strips
Grill Mates chicken seasoning
Worscheshire for chicken/fish
a dab of minced garlic
crushed black pepper, cayenne pepper (of course)

throw that all in a pan with some oil, add in some sweet corn for a side dish with some garlic butter mashed potatoes....a tasty fast dinner

Take a 4 pound fryer put a head of garlic inside and put it in a one gallon dutch oven with 1/2 inch of water with some kind of stainless trivet to keep the chicken of the bottom of the pot. Bring it to boil and turn down to simmer for an hour. Crack the lid let it cool for 15 minutes.

Tear the meat off the bones and put on buttered toast with strawberry jam and dip in soy sauce and franks red hot.
