Need Zucchini Recipes

Got a ton of zucchini about the size on my forearm. Besides broiling, grilling, and frying them, what do you suggest.

Make a fritata:
grate or finely chop a zucchini.
saute it in a non-stick pan with garlic until pretty much cooked. Add about 6 beaten eggs, maybe some grated cheese, salt and pepper. Stir it all around over the stove to get some air into it (basically, you are partially cooking it on the stove). Then, put it in a preheated 350 degree oven for 10-15 minutes until it sets. You can eat it hot, cold or room temperature.

Zucchini pancakes:
grate a zucchini and an onion. Mix in a bowl with an egg or two, some herbs, salt and pepper, and flour or matzoh meal. Fry about a quarter cup sized pancakes in some oil. You can make a ton of these and freeze them, they reheat well in the oven. I'va also made these with curry in them, serve with yogurt or sour cream.

If you are growing zucchini, the best thing ever to do is to make fried zucchini blossoms. Take a blossom, gently rinse it and pat dry. Then, stuff a small piece of cheese inside of it (mozarella or asiago are good). Make a batter of one part beer to one part flour. Dip the stuffed blossoms in the batter and deep fry in a pot of hot oil. They are done when they turn golden brown and float. Serve with a marinara sauce.
-I serve them on a bed of mixed green salad and I make a warm dressing by lightly sauteing a clove of garlic in some olive oil, then I take some over-ripe tomatoes and cut off the top and squeeze out the innards. cook for about 2 minutes and you get the freshest tasting sauce ever.

Zucchini bread is really good, you could make that.

Juice them! heat the strained zucchini juice with a little butter and a sprig of fresh thyme then swirl over high heat to emulsify the sauce. Serve with seared sea scallops seasoned with salt and schzeuan pepper (or fresh ground coriander seeds).

Steam a basket of unpeeled zucchini slices 5-10 minutes. Serve with lemon juice and salt.

zucchini bread - mmm mmm

2 cups shredded raw zucchini
3 eggs
1 3/4 cups sugar
1 cup vegetable oil
2 cups flour
1/4 teaspoon baking powder
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoons vanilla
1 cup chopped walnuts

Put zucchini in strainer and press or squeeze with hands to get excess liquid out. Beat eggs, sugar, and oil together. Add flour, baking powder, soda, cinnamon, salt, vanilla, and walnuts. Mix together by hand.

Add drained zucchini. Mix well. Pour into 2 greased and floured loaf pans. Bake 55 to 65 minutes at 350°, or until a wooden pick or cake tester inserted in center comes out with very little cake clinging to it.

It's been entirely too long since I had zucchini bread, I thought my maw used to put parmesian cheese in it tho...oh well I trust ya

all the zucc bread I've had is nice and sweet bread

kinda like banana bread but with zuccs instead

I like 'zuccinni mendleson' as a side dish or hors' dourve.

Cut your zuccinni into thick rounds, like a small "tealight" candle. Scoop a whole in the middle of your rounds with a melon baller or teaspoon, and fill it with a mix of equal parts of mayo & sour cream (season that mix w/ salt, pepper and your favorite zuccinni-friendly flavorings or herbs. I suggest minced shallots). Line those up on a baking sheet, sprinkle with parmesan cheese & roast @ 350 until golden, about 10 - 12 minutes.

Sorry this took so long...I had a few projects due for school
These are really great.

Zucchini Pie
4 eggs
1 cup cheese(mozzarella and grated Parmesan mixed)
3 cups zucchini (cubed very small)
1 cup Bisquick
1/2 cup mazola
1 tiny onion (chopped really small)
salt and pepper
parsley
Mix all ingredients together. Pour into a pie plate and bake in a 325 degree oven for about one hour or until knife comes out clean.


Spaghetti and Zucchini
Saute 1 onion with at least five cups of Zucchini
Add a tomato
basil
water to fill the pot
2 bouillon cubes
salt and pepper
Just cook this all day
Ricotta salata (not too sure how to explain what this is, but if you go to an Italian deli they should have it. But it by the chunk)

Take a pound of spaghetti and break into about 1 inch pieces. Boil according to directions.
When pasta is done, drain and put the squash sauce on it.
Shred the ricotta salata on top and Enjoy!

If anyone has any questions please feel free to PM me. I've been making these recipes it's hard to put into words exactly what to do!
