As for the trays, I bet cyans would prefer the flat ones and species like bisporus the deeper ones.  As the former is more sensitive to blotch, and the others air currents.

But to answer your question, optimal depends on everything.  If the caps are blotchy then you are going to want less humidity and more air exchange.

But generally, good air flow and humidity between 90-95 is good for fruiting to encourage larger caps.  If there's less air flow, you'll want less humidity (closer to 85).  During first flush pinning higher humidity and less air flow so the pins and casing don't dry out is good.  And when fogging casings it's fine for the humidity to shoot up to saturation levels.

And it's certainly possible to find a happy medium where you can pin and fruit without adjusting things, but this can be somewhat dependent on the presence of bacteria that causes blotch.

But to quote beefy, it's an intuitive process. We kind of have to learn what the mushrooms like and how to dial things in. Everyone's home is different, sensors can be calibrated differently, and each variety will have different epigenetic markers determining their preferences, and of course some of us grow several different species which can have slightly different preferences.
