I see what you're saying about sugar being more of a flavor enhancer than an actual flavor, potato. 

I will say that rolling my dough balls in extra sugar did good things for the overall cookie flavor when I baked some straight from the freezer this weekend. And I think whatever ingredient is used in place of sugar should have some sugar content as well, based solely on my two experiences with this batch.

So I did some math to find the granulated sugar equivalent in semi-sweet chocolate chips (based on Ghirardelli nutrition facts)
  • If using 7g shroom powder, I think adding 2 Tbsp extra sugar is a good balance
  • 2Tbsp sugar = 24g
  • 1 serving of semi sweet chocolate chips has 8g sugar
  • We'll need 3 servings of chocolate chips
  • 1 serving of chocolate chips is ~1.41 Tbsp
  • 3 servings is 4.23 Tbsp or just over 1/4 Cup
  • If using extra chocolate chips instead of extra sugar, I would add 1/4 cup extra chocolate chips


Brown butter, the best!!!  However, it won't work as a direct substitute in recipes like this, and it is best to find a cookie recipe that uses brown butter.  I know this because I tried this in a butter pecan cookie recipe and the texture was way off. Even after I let the brown butter re-solidify in the fridge, it would not cream with the sugar very well and the cookies were dense :frown:

A little sprinkling of salt would be a good touch indeed.

This is sounding like a great recipe and thank you for all the info and experimentation you did! I’m wondering how the OG Toll House recipe would come out? 🤔

In our house we substitute monk fruit powder for sugar at a 1 to 1 ratio. We use it in a lot of stuff instead of sugar. Monk fruit works great in BBQ rubs in place of sugar as well.

Toll House will definitely produce good cookies (we all know this). However, the adjustments to the recipe will be different than what I posted, because of ratios. I'll elaborate:


Salts Baking Addiction Adjustments (recipe in OP)
  • Calls for 2 cups flour (32 Tbsp)
  • I added 7g of powdered shrooms (roughly 3 Tbsp)
  • 3/32 = 9.4%
  • I increased the amount of flour by 9.4%, so I need to do the same with the butter
  • Calls for 3/4 cups softened butter (12 Tbsp)
  • 12 x 0.094 (9.4%) = 1.128 Tbsp
  • Total butter should be 12 + 1.128 = 13.128 Tbsp = 13 Tbsp + 1/3tsp
  • I added 1 extra Tbsp butter and it turned out great


Toll House Adjustments
  • Calls for 2-1/4 cups + 2 Tbsp flour (38 Tbsp)
  • 7g of powdered shrooms (roughly 3 Tbsp)
  • 3/38 = 7.9%
  • Calls for 1 cup butter (16 Tbsp)
  • 16 x 0.079 = 1.264
  • Total butter should be 16 + 1.264 = 17.264 Tbsp = 1 Cup + 1 Tbsp + 3/4 tsp butter


Lol, after doing all that math, it seems the adjustments are just barely different. I didn't expect that. But you get the point, ratios are important.

TL;DR... Toll House recipe should work about the same :lol:


I can't comment on monk fruit, other than a quick read says it can be used 1:1 as a sugar substitute, but it is sweeter than sugar by nature and this may make your baked goods sweeter. You'll have to find the right balance for your taste buds.

Semperviva Shortbread

I've been pretty enamored with semperviva lately and figured it was time to put it in a cookie.  This recipe is studded with toffee bits and dipped in semi-sweet chocolate.  Yummy. 

I'm new to shortbread so this is still a work in progress.  Some things I learned along the way:
  • Don't let the butter get too warm when mixing
  • Don't overmix
  • Don't overwork the dough when shaping logs
  • Chill for at least an hour
  • Let the oven temp stabilize before baking
  • Don't overbake, but do let 'em get lightly browned! This really brings out the flavor.

None of these things will ruin your cookie, but they will keep you from achieving a well-shaped, well-textured boomer biscuit.  I used this recipe: Chocolate Toffee Slice and Bake Cookies.  It makes 24 cookies and I added 2.5g dried semperviva, giving each cookie ~0.1g horsepower.  I've copied and pasted below and added my notes in blue. 



Cookies
  • 3/4 cup (168 g) unsalted butter, at room temperature
  • 2/3 cup (133 g) granulated sugar (an extra tbsp or so of sugar would have helped offset the earthy mushrooms a bit)
  • 1 1/2 tsp (6 g) vanilla extract
  • 1/4 tsp salt
  • 2.5g dried, powdered Semperviva
  • 1 3/4 cups (245 g) all-purpose flour
  • 1/2 cup (75 g) toffee bits

Topping
  • 1 1/2 cups (255 g) semisweet chocolate chips (I used 8oz semisweet baker's chocolate bars)
  • 1/2 cup (75 g) toffee bits


Make shortbread dough:
  • Beat butter and sugar in a large mixer bowl at medium speed until combined; add vanilla and salt and beat until incorporated. (I mixed by hand with a heavy wooden spoon and a stiff spatula so I wouldn't overmix) Scrape down bowl as needed.

  • Reduce speed to low and mix in flour just until incorporated and dough begins to come together in large pieces. (Add your flour in batches. First batch I added the semperviva powder to 1/2 cup flour and mixed this in first so the mushrooms would be evenly dispersed in the dough. Don't Overmix!)

  • Mix in toffee bits. (the stiff spatula helped here)




Chill dough:

  • Divide the dough in half and turn out each half onto a piece of plastic wrap. Roll each half into a 6 1/2-inch log, using the plastic wrap to help shape the soft dough.  (Work quickly so the dough stays cool and holds its shape and the butter doesn't separate; this will cause the cookies to lose their shape and get greasy)

  • Wrap logs tightly in plastic wrap and chill for 1 hour in the refrigerator.




Slice & Bake cookies:

  • Line a baking sheet with parchment paper or silicone baking mat. Using a sharp knife, cut logs into 1/2-inch rounds. (Each log got cut into 12 pieces: I cut the log in half, then cut each half in half, then cut each quarter into 3 pieces)

  • Place rounds 2 inches apart on baking sheets. If desired, gently press rounds with the bottom of a measuring cup to make them perfectly level. Chill for 20 minutes in the refrigerator while preheating oven to 350°F.

  • Bake cookies for 16 to 18 minutes, rotating pans halfway through, until lightly golden and edges are set.  Cool for 10 minutes on baking sheets, then transfer to a wire rack to cool completely.  I wish I'd gone a minute or so longer; I pulled them out before they reached a proper lightly-toasted-brown, and realize now that I missed out on a serious flavor-punch




Melt Chocolate & Dip Cookies:

  • Line two baking sheets with parchment paper. Place chocolate chips in a glass bowl and microwave in short bursts, stirring until melted and smooth. 

  • Dip half of each cookie in melted chocolate, tapping gently to remove excess chocolate.

  • Place dipped cookies on prepared baking sheets and sprinkle with toffee bits. I skipped the extra toffee bits because I was too busy dipping the cookies in chocolate, but I wish I had because it would have amped up the flavor and texture

  • Chill in the refrigerator for 20 minutes to set chocolate before serving.

  • (You can also melt chocolate & drizzle on cookies with a spoon.  You use less chocolate and save a few bucks.)




Final thoughts:

  • These are nice little edibles :sunny:

  • An extra tbsp or so of sugar would have elevated the final taste

  • Store in freezer and pull a cookie at-will

Cool idea!

I did chocolates with mushroom powder and weed infused into coconut oil sometime back, a little meltier than my usual chocolates but NBD, really. I thought they were awesome, but people were a little gunshy. One issue with mixing the two is that peoples' tolerances can be all over the map, so the combination can make dos8ng tricky. Not a problem for personal use, as you know what you like. But for larger batches, I kind of gave up because so many people were like "uh, nah, I don't know about all that." So I've tended to keep them separated, weed cookies and mushroom chocolates, and people can make their own decisions about how much of each to eat.

But then this got me thinking- what if you made mushroom chocolates and then turned them into the "chocolate chips," and mixed those chips into the weed-infused cookie batter? I find that with good dark chocolate, the mushroom flavor isn't even really noticeable, and the same goes for properly made weed butter/oil mixed into cookie dough. This way, you could make different batches with different amounts of chips, and there would be a visual indicator of how "trippy" each batch of cookies was. Like when you get Indian carryout and select a spiciness level ranging from "how it should be" to "I don't even put paprika in potato salad and think that Old El Paso taco seasoning is too hot."

Anyway, regardless, I'm always fascinated to read about these sorts of projects, and the way that "heat destroys potency" and related myths are being utterly demolished.

That's quality thinkin B.  Magic choco chips tucked into special cookies, really next level cerebral stuff. 

I've had the desire to make thin mints with mush in the cookie and weed in the chocolate coating.  However, I'm not doing weed atm, so this is yet to be tested.

I've also learned that few people take the leap of faith when it comes to edibles.  As with all drugs, the right level/mix is whatever makes someone comfortable.

Would love to hear of any culinary adventures you decide to take.

Made more cookies today using the recipe in the op. I kept to the recipe except for these additions: 2.5g dried/ground semperviva/Subtropicalis (2.5 tsp) and 1 Tbsp sugar. ~0.1g per cookie, makes for a nice edible with semps :sunny: Came out great!



Rest of the batch goes into the freezer

The possibilities are really endless :mushroom2: Use shroom tea in place of water to proof yeast for bread :mushroom2: Sauté fresh shrooms with onions and garlic and herbs then mix with gruyere cheese and spoon into puff pastry cups for shroom tarts :mushroom2: Replace some flour with ground mushrooms in muffins/corn muffins :mushroom2:
