how big they grow is totally dependant on available moisture [first] and nutrients [second]. If your cakes are fairly dry, they the mushies will only get so big before they run out of "steam" and have to open up and do the spore thing. If they are pinning in clumps of 4+, if you nip out the smaller pins early on the remaining shrooms will typically get much bigger.
