Due to the pressure from the outside, the steam gets pushed into the bag. but that's just my interpretation

Let it sit for a day and see how much moisture is re-absorbed.  IME they always look wetter right after you pull them out of the PC.  In general, bagged grain needs to be a little drier when it goes in than jarred grains do so that might also be a contributing factor.

Avoid opening them. They are sterile and sealed nicely. I pull the bags out of the PC in front of the flow hood after it has cooled and then immediately seal the bag. Immediately.  No opening the bag first. I put on three seals as there is water at the edge. Don’t open and wipe — just seal. The tricky part is over. You could probably shortcut here but this what I’ve found that works

Once sealed you can stretch the bag, suck in some air through the filter and shake it up. The excess water gets absorbed by your grain assuming you put wet-on-the-inside-dry-on-the-outside (properly hydrated) grain in the bag

That’s it. Is it worth it? Shrug — works for me

With jars, you just tighten the lid before you remove the foil. And, you can do it immediately after opening the PC. Sealed and done

When i got home from work, the excess moisture was basically absorbed. I was freaking out over nothing. I hadn’t opened the ends of the bags, so I used the impulse sealer on them 3 times like you said. I just put SHIPs on and inoculated them. Thank you for the help.

It's better to fold the bags with the filter covered. Don't wrap it around the whole bag like that.
Fold the flap in half covering the filter, then fold in half again. You can put plate on top to keep everything in place.
Shit, you can even use masking tape to keep it down if that makes you nervous.

Once you hit pressure you don't need your stove cranked
full blast anymore. You can turn the heat way lower (medium, medium low)
and maintain pressure. It's easier if you attach a couple of quarters to
the jiggler for extra weight.

Go at least 2 hours.

I put some magnets on it.

Anything lower than Medium and it starts to lose pressure.

Thanks for the advice. I will let them sit for a while and check it out. One thing that did not go as I expected; the bags did not actually seal in the PC like I thought they would. The plastic bags are 6 mil. They do look vacuumed, but if i were to pull the opening, they would open right up. I may have misunderstood the instructions that I read and the videos i watched, but I am pretty sure other people’s bags completely vacuumed and sealed shut in the PC. Do you know what I mean?
