Innoculation plugs or grain-to-sawdust for shiitake?

Hello all. I've been researching shiitake cultivation for a few days now, and am confused. Can I order a syringe and innoculate grain jars, let them colonize, then transfer to sawdust, incubate, and fruit the sawdust in a fruiting chamber? Or does this not work well? Are plugs the only way to begin growing this species? Thanks!

The way that you describe should work well.
Plugs are normally only used for the inoculation of logs.

  Thanks!  I just came across the sawdust tek at the kitchenculturekit link, looks fairly straightforward.  And my friend has some left over rye in the freezer from his cubensis grain jars.  :wink:  So, we'll give it a shot.  Is there just one species of shiitake that most people grow?  I'm a newb to shiitake cult. and mycology in general.  Sorry.

yes, AFAIK lentinula edodes is the one and only shiitake mushroom. there are, however, "strains" which are basically cultures which have been acclimated to prefer certain temperature ranges and possibly other growing conditions.
