2021 PNW edibles

Got loads of Boletus edulis on the Oregon coast a few days ago. Hit up an apple tree that we discovered last year and grabbed some apples to make muffins with for sure!

Found all these at the end of September. Coral mushrooms, chantrelles, a single lobster mushroom, and a single huge cauliflower mushroom we cut up.

What do you do with so many edible mushrooms ? How do you prefer to cook them?

Give them away to friends or family, depending on the species you can dry them out fill capsules with the powder and use them as a supplements, all different kinds help with all different kinds of things, I think most mushrooms are supposed to be cooked at different temperatures but I tend to cook the softer mushrooms quicker and the meatier ones for longer because I don't like the slimy texture, never was a mushroom guy until I tried them sautéed in butter plain, you can add them to stir fry or you can cook them on the stove like a steak, but as I said before they're good for you so eat your fungi groups boys and gals

Chanterelles are out in abundance. Got myself a couple pounds of them, cooked them up, ate them on top of pasta. :grin:

I dehydrate tons and powder them, have a ton of jars. Used to be able to give a bunch away to friends and when I worked in a kitchen would give them to my chefs also but haven’t met some new people here yet.

Found a few Clitocybe nuda today at the coast.



They always smell so nice when fresh almost like orange juice.

Beat my record for latest Boletus edulis I have found on the north Oregon coast area too. Last year my new record was November 9, this year November 10!



These Amanita pachycolea were pretty abundant on a trail I hiked the other day. I’ve never eaten them but they require no prep other than cutting and cooking.




Haven’t found any chanterelles yet this year, have been checking out new areas and coming up fruitless! Did find a few Tricholoma murillanium in Gardiner a week back or so.

Man I'd love to find some kings, but I never seem to have time to make it out to the coast. I live in the Willamette Valley and it's difficult to make it all the way out there between work and keeping up with errands and shit.

I harvested mine at about 2000 ft. elevation in Tillamook State Forest. I've been hearing that's about the elevation where people have been having the best luck this year. I found a nice forested area with no underbrush, just moss and downed logs, and started searching. They love those moss carpets, you'll see lil orange frills popping out of the green.

Most definitely, those big guys always go straight to my dehydrator. The underground buttons are my absolute favorite to eat with the tight white pore fresh porcini coming in a close second; it is not often I come across those aside from foraging Boletus rex-veris in the spring, those spring kings cluster on an insane level.

I'll have to check out Tillamook State Forest next for sure, been over by Oakridge, Blachly, and Mary's Peak to look so far. Definitely was early to Mary's Peak, at the time was finding only Turbinellus floccosus which usually are an indicator species for me to find various Cantharellus species.

Yeah I saw some wooly chanterelles up there as well. Based on that list you must be down by Corvallis, Tillamook is a pretty long drive for you.
