went hiking with @cro today on the quest for chantrelles--yet again-- and finally found a few!!!

we had definitely stumbled on someone else's patch, there were only smaller ones left.  since it was our first chantrelle find we took a few of the small guys cause we're dying to try them!

we also found a ganoderma and a cauliflower mushroom!! :thumbup:

My girlfriends father has the world record for the largest cauliflower mushroom, which he found in the late 70s while he was working as a firefighter in the forest industry. It took two men to carry the 75 pound fungus back to their vehicle, and it measured over 80 inches in circumfrence.

That cauliflower mushroom looks a little different from the ones I find here. The "layers" are much more condensed, rather than spread out like yours...

Does it smell like swiss cheese? :smile:

haven't tried the cauliflower's yet, the ones I found looked like too much of a bother to clean but I hear they're good.

Does that indicate you've never eaten them or just not this year???

Never have found a Cauliflower mushroom that large.

mmm chantrelles are tasty. Just had some fresh ones from the queen charlotte Islands last week. I'm Heading up country to find some Pine Mushrooms this weekend hopefully. I'll post some pictures if i find any.

exactly.  never found em, never eaten them.  cooking them up tomororw night, i cant wait!  do y'all recommend just stir frying them up in butter and garlic?

chantrelle season in eugene has alread blown up full scale. the company down here that buys golden chantrelles isnt buying them anymore. their 6x6x10 walk in fridge is completely full with perfect speimens (this means under 3 inches in length, perfect caps, no holes, and no crumbling.)

they were only buying them for $1 a pound too

Psillygirl. I have a little cookbook I put together of PNW wild gourmet goods. I had planned on going to Alaska at one point to work at a Lodge. Decided not to.

Anypoo...my take on Chanterelles is that they are delicate in their flavor. I've definitely been spoiled on my finds and use them a BUNCH...so I hope you'll heed my advice. Garlic and butter. YES!!! For sure the way to get their flavor at their peak! No salt until they start to take their liquid back in though. It tends to make mushrooms tougher.

FAB with (served over the top or on the side of ) fresh caught Salmon, grilled beef or chicken sauteed in garlic,butter and a little olive oil. (I fish!) If you get salmon, you can Alder smoke it using leaves from an Alder tree in your neighborhood. (Just strip off a grocery bag full.) Seal up any spots on your grill that smoke could escape with aluminum foil.

Cook the salmon on a grill, and when it's nearly done...Turn off the gas and throw the leaves (a bunch) down over the gas thingy or over the charcoal and close the lid quick. It'll smoke like crazy which is what you want. The flavor is so YUM though!

Chanterelles in red sauce just covers their flavor. Keep it light and you'll enjoy them! Whoot! YUM! ENJOY!
