You should be able to tell them apart when they mature. I use a Ball canning jar marker to label the jars after innoculation, and on the trays when casing. It won't fall off like tape can, but its also not perminent like a sharpie....will wash off in hot soapy water when clean everything for the next run. BTW found it at Wally-Mart by the canning jars....89 cents.
