Pressure cooking duration
    #1395691 -

On 3/16, a friend of a friend started a new batch of 6 1-pint BRF & verm cakes.  There's just one thing I think he may have underestimated.  He pressure cooked the jars for only 5 minutes at 15 psi, like the pressure cooker directions specified.  But I'm reading quite a bit on the forum that people are pressure cooking for like an hour at a time sometimes.

Was 5 minutes way too short?  Although the cakes are colonizing normally so far, and with no discolorations as of yet...he's still wondering if that significantly raised the risk of contaminations.  Any input would be appreciated, since this is his 2nd try at cultivation.  :ooo:

Man the directions for the pressure cooker are for foods (i.e meat, beans, etc). Pressure cookers aren't intended for mushroom substrates.

The whole reason we "mycologists" use a pressure cooker is to sterilize the substrate (for mushrooms) not to make food better tasting. Therefore follow mycologist directions not cooking.

You want to pressure cook for at least 60min at 15PSI for most substrates (grains, alien substrate, etc)

I hope that wasn't a suguar-coated way of telling me that my jars are going to contaminate...heh.

5 minutes was probably too short. The outer shell of the jars are most likey sterlized, so normal growth of mycelium will happen. But the inside of the jar probably was not sterilized, therefore there is a possibility that there are mold spores or bacteria that may have survived in the center of the cake. With in the next 2 to 3 weeks that will probably come out. It will take a while to permiate all the way to the edges of the jar.

It is most probable to restart the process with fresh jars and new spores for optimal success. And follow the instructions to the tee. They are there for a reason, they work.

No, it has nothing to do with directions...because the first time he pressure cooked jars, it was only for like...maybe 15 or 20 minutes. None of the 12 contaminated.

I was refering to the statement that the jars were only pressure cooked for 5 minutes. That is just not enought time the temperature to rise in the jars to the temperature required to kill most life (some life like mad cow's diesease live up to 1000 degrees farenhiet).

Following directions is probably the most common error beginners would make. The instructions that float around have been used by thousands of people (PF made 30,000 a month!). If the instructions are followed 100% step by step, they are designed to prevent failure. The entire PF tek was designed so normal people doing simple tasks at home could suceed.

But not following instructions will do it to you everytime. Something will be missed.

Ah, I see what you're saying.  Just in case my friend gets lucky, he's probably just going to wait it out and see.  Until then, some new jars will be started soon.

*sigh* Another trip to the health food store

5 minutes is way too short... You'll be lucky if you don't get contams.

PF jars need about 30 minutes at 15 psi

:frown: :frown: :frown:

Just as you guys said, I dumped out 5 out of 6 jars today.  I'm waiting on the last one to contam...that was a really big waste of vermiculite and brown rice flour.  Feh.

What is the shortest time to pressure cook brf cakes you can get away with? All the vids on YouTube say 20 but everyone on here says 60? So what would you guys suggest 60?

You are going to spend so much time waiting and so much effort making the jars - why try to save time on sterilizing?  Cutting this corner is one of the easiest ways to get contams...  Just leave it in for longer.
