Introduction:
Fractionated sterilization is a procedure whereby grains and other substrates can be adequately sterilized without the use of a pressure cooker by a series of sterilizations over the course of a few days. In between fractions, jars are maintained at an elevated temperature allowing bacterial endospores to germinate and become vulnerable to future sterilizations. The purpose of this experiment is to see whether a) Fractionated sterilization is a viable alternative to the use of a pressure cooker and b) To determine which method is superior: soaking or simmering of grains prior to sterilizations in achieving proper water balance

Materials and Methods:
Organic Wheat Berries, Organic Yellow Popcorn

4/15 Approximately 2 pounds of wheat berries were divided into two portions. The first portion was simmered for approximately 20 minutes in filtered water while the second portion was soaked for approximately 18 hours and not cooked. Both were strained for 20 minutes upon completion of simmering/soaking and were loaded into 12 1/2 pint mason jars (6 simmered, 6 soaked).
Jars were then boiled for 45 minutes and subsequently removed from heat, thereby completing sterilization fraction one. Pending sterilization two, jars are maintained at approximately 80F.


4/17 Sterilization two was completed approximately 36 hours after the first fractoin as per sterilization one (45 minutes simmering) and popcorn underwent a similar procedure to complete its first fraction. 6 pint jars were half filled with popcorn whose dry weight was approximately 2 pounds

4/20 The third sterilization procedure for both wheat and popcorn was completed on the eighteenth. For the wheat, 4 jars (2 soaked, 2 simmered) were innoculated with B+, 4 jars (2 soaked, 2 simmered) with Cambodian and 4 were left uninnoculated as a control for contamination. If the uninocculated jars contaminate, then the fractional sterilization procedure failed. Popcorn will likely be innoculated within the next two days

Cool, I'm sure a lot of people who don't want to invest in a pressure cooker will be anxious to hear your results.

I've seen similar questions come up here on the board... 

It's good to see an intelligent and methodical approach.  I'm sure this will be a valuable information resource for others without a PC wishing to use grain substrates.

it worked for me in the microwave. wanted 1kg millet to 800ml water, so i added 1 litre. microwaved over a few days until weight was 1.8kg down from 2kg. it is colonised now

i think 45 minutes of simmering on the wheat is a more appropriate time. popcorn should be simmered for 1.5 hours. i am looking forward to seeing your results on the fractal sterilization of whole grains.

The second fractionalization is underway for the wheat and the corn is next on the chopping block. After 20 minutes of simmering, the wheat berries started to explode which I've heard is bad for shakeability so at that point I took them out. The soaked wheat does looks more moist however...

An update to the original post is on the way.

Update:

4/25
After a few days of sitting at 86F, all jars are showing growth with the best being shown below. Both the soaking and simmering procedure seem to be viable at this point, as colonization progresses, the better will be highlighted. None of the jars show any sign of contamination, conclusively proving that fractionated sterilization is a viable alternative to a pressure cooker. It should be noted that the labor intensive process would only be practical for those who have ample time on their hands and really are too cheap to buy a pressure cooker.
