You don't want to seal up your jars in a pressure cooker. That's a bad thing. There has to be at least one way for air to get out of the jars. Either leave the holes untaped and cover with foil, or tape the holes and leave the screw lids on loose. Personally, I leave the holes untaped. I've never had a problem with water getting in as long as foil was used. Just make sure you don't put too much water in the pressure cooker.

The jars just need to be really hot. you can boil them but steam does not shake and possibly break you jars, which is why it is preferred. tape the holes and just dont screw the lid on extremely tight. get it tight and then back off a quarter turn or so and put on the foil, wrap the whole jar if you like. peace

If you use propper canning jars (Mason) the jars can be completely sealed and put in a pressure cooker. The rubber seal allows gases to escape as the pressure inside the jars gets too high. However, in MMGG, the holes themselves will do these (and you have the rubber seal to fall back on). Clamp the lid down tight, these jars CAN TAKE THE HEAT.

Once you have innoculated the sterilised substrate in the jars, do you then put tape over the holes, or do you leave the holes open from innoculation to 'birthday'?

science rocks!! . . . the answer to your question relies on whether you're using a pressure cooker or just a lidded pot. if it's the former, tape those holes, screw down lids tight, and back off about an 1/8" just to let pressure escape before cooking. If it's the latter, I think I read somewhere that the steam acutally needs to permeate the jars to be effective, so the lids should be significantly looser. Reason being, a pressure cooker at 15 psi's generates 250 degrees F, whereas a pot will give you the same temp as boiling water: 212F. In any case, allow the whole affair to cool to room temp before even opening up the pot! Then when removing the cool jars, tighten those lids down. Good luck.

After I innoculate, I put tape over the holes and leave it that way until they are ready to birth. I know that there are better methods out there and that allowing air exchange helps the jars colonize faster but everytime I've done something to that effect I end up with contamination in my jars. So, to be safe, I keep the jars completely airtight. Almost never have contams doing it this way. Also, I use the oven tek to innoculate. Hope this helps.

Steam does not need to penetrate into the substrate,just heat. If you allow steam (or other water) into your substrate you are throwing off the ratio of water an screwing everything up. I put the lids on jars tight and leave them untaped (with foil on top) while steriling and it works great.

Yeah I once sterelized my jars and I didn't have any foil so I used syran wrap and I had 0 problems or contams and I put the tape back on for 3 days then took it off and it colonized on 1 1/2 weeks. :smile:

If don't out your lids on tight, this will create a vacuum. meaning.. air will get sucked in rapidly into the jar.. this is bad becuase it might be contaminated

My friend used packing tape on his jars (the clear kind), to cover his holes. He then puts these in the canner with no foil. the tape never falls off. He then peels this tape off after cool down, innculates and puts a fresh piece on the wholes until he has quarter size growth spots, then he removes the tape for good. he has never had a contam (so far).

My friend uses the clear packing tape too. He's been afraid to remove it though because his incubation chamber is heated by an aquarium heater in water. Something about the high humidity seems to speed possible contamination. Do you incubate your jars? Maybe I should finally invest in one of those damned HEPA filter things. Maybe when I have money to blow.
