Popcorn water content

When certain grains are prepared, for example rye grain, it is common practice to add the appropriate amount of water to a quantity of grain and then pressure cook, during which time the water is absorbed by the grain.

When other grains, such as popcorn, are used, the common practice is to soak the grain in water for a period, boil for a short time, drain, and then sterilize, thus ensuring the correct water content.

However, is this distinction due to:

i) the water absorption capability of grains such as popcorn being more variable, or

ii) the water absorption capability of grains such as popcorn being less rapid, i.e. even if precisely the correct amount of water was added to the grain, it could not be absorbed during pressure cooking?

I.E. Would it be possible to determine precisely the water absorption quantity of a specific batch of popcorn, add water and then pressure cook without soaking, or is the structure of popcorn such that soaking is an absolute prerequisite?

from my popcorn experience, its number 2. i think water takes a lot longer to absorb H20. i like popcorn, and i'm thinking of going back to it.

The main reason to soak popcorn is to germinate the heat resistant bacteria endospores, so the PC can kill them. Otherwise, many survive. Popcorn takes longer to soak up water, so I would recommend you boil for an hour or so, then load into jars and PC. My rule of thumb when using popcorn is to watch for the kernals to appear to have doubled in size.

true, not just for popcorn,
but for any hard shelled grain.

Roger i dont soak popcorn anymore ...i just pc it for an hour and then put it in my collander to drain before loading jars for the sterilization process....I get less than a 5% contam this way

Do you pressure cook the popcorn fully immersed in water? Does your method imbue the popcorn with the optimum water content? It sounds like a great method.

Yes the popcorn soaks up a lot of water so you want water fully covering it...Try it at 45 minutes first and just ck if its nice an swollen ....make shure its soft but not falling apart.
I was pcing for 45 but it was still a bit hard so i started pcing for a full hour....I like this method because in effect you are really sterilizing it twice....make shure you rinse it good and get rid of the oily residues before draining and loading it in your jars ...The only problem i have had was when you are digging the fully colonised corn out of your jars...if you cut the corn it can contam easily on any exposed/cut corn pieces...Just try and be gentle and sterile when spooning it into whatever type container you are casing it into.

Thanks Alounacara, that sounds like a great method :smile: . I find the process of presoaking and boiling restrictive and time consuming, so your alternative sounds very exciting! Thank you.

One question though: If popcorn is rinsed after pressure cooking, then allowed to drain, should the drainage time be increased as the popcorn will be coated in cold water, as oppose to rapidly evaporating hot water? What would you reccommend as a suitable time?

I usually do 2 lbs at a time and when it is done i pour it in a 5 gallon bucket and rinse it with hot water several times ...then just put it in a collander to drain and shake excess water out several times ...also put a small amt of verm in the bottom of your jar to absorb excess water...when you load it in your jar it should just get your hand moist...then you should be ok with water content
It only takes a few times and you will know exactually how to get it just right...good luck and remember to be gentle when taking the fully colonised corn out of your jars when making your casing...I just use my hands n fingers to get it out and that way you dont cut the colonised corn and expose it to the nastys...
