Blue oysters

Here are some pics of a some bags of P. columbinus that I recently fruited. The substrate is pasteurized straw. They tasted yummy.

whats Intresting is no blue ones. Iv noticed that just the pins start out blue but as they get older they trun white/brown.

Is blue a temperature reaction? Perhaps that is why they are missing.

Yeah mule, they were more blue when quite small. Light, temp, and CO2 can all influence color. Especially light, which causes darkening as the light increases. Off course, this culture is a trade so for all I know it may just P. ostreatus....

As for fruiting conditions, I let the straw colonize inside (70-80 F), then I just put them outside on a board balanced over my composter and covered with a triple thickness of Remay row cover (for veggie crops), and sprinkled them every day. Nature did the temperatures and they varied between 80 to 60 F. I have some oyster coming on now that seemed to like it a bit cooler.

I thought mine were pearl oysters at one point as well when i fruited them off of straight sawdust. But they are in fact blue oyster. I guess they got their name from the color of the pins which do appear blue, because the color gets lighter and lighter as they grow.
