AFAIK most pork is pretty clean and fine to be served rare, any worms die at <140*F. With as treated as most bacon is I doubt there's much risk in eating it raw, but surely safer to cook it. I eat very lightly baked, and super chewy bacon all the time. Then, a more cooked but still chewy piece, then a crispy piece, and finally a burnt piece  :drooling:

I don't like chicharrones, but that's about it AFAIK.

Not true, I have gotten food poisoning from undercooked bacon before

Not frequently.  Where it comes from doesn't phase me at all, everything has to come from somewhere.

Nothing like a pork shoulder that's been cooking in the crock pot all day soaking up the spices.

Oh man, I just bought a 7lb pork shoulder today. Got it for a hell of a deal, was only 99 cents per pound.

Just finished making the Korean BBQ marinade for it--soy sauce, garlic, sugar, and gochujang (red pepper paste). Going to either braise this or roast this tomorrow.

Depending on your definition of under cooked, it may not really be a sketchy thing to do. For the longest people believed/accepted that you had to cook pork all the way through and that any pink was likely to result in you getting sick. If that is your definition of under cooked, then it's simply not true. It is possible to legitimately under cook pork, it's just a lot more rare (doneness, not frequency) than most people think.

Roasts I do cook thoroughly, but not out of fear. To me a good roast is one that that virtually falls apart in your mouth. You're just not really going to get that cooking it at higher temps and rapidly. It requires time to really break the meat down. Getting 100% done is really nothing more than a byproduct of my preference. Pork chops, I prefer to still be a bit pink in the middle. I've pretty much always found well done pork chops to be dry and tough. Cooking them only to medium/medium well, they stay tender and plenty juicy. Flavor is a bit better, too.

Translucent pork is horrible..  brown your chops in a skillet, put them in a pyrex dish.  Wash out skillet, pour skillet water in pyrex dish, cook at 350 until baked down and 'encrusted' with drippings.  They will fall off the bone. Gravy optional.. Undercooked pork is horrible.

Raw bacon, man?  Really?  :puke:

Don't get me wrong, I've been to some high-end restaurants that serve pork medium-rare even. But it is most definitely possible to undercook pork and get sick from it. The one time I undercooked my bacon I ended up vomiting and shitting diarrhea for 3 days. Couldn't eat bacon for YEARS after that too, just had a terrible queasy feeling like I had to throw up every time I smelled it even.

Dude I was like 8-10 or some shit  you can't tell me you didn't do a bunch of stupid shit when you were a kid. Everyone does. For the other part, I do not like having to finish foods in an oven. If I'm making pan seared pork chops, I'm not getting the oven and braising involved. It destroys the flavor I was even going after to begin with. If you can't tell the difference between a piece of meat that was cooked by searing and pan cooking alone from one that was seared and then braised, I really don't know what to say. There is a huge difference. What is it with you and the oven anyways? It's like your solution to everything. First it was picking up the slack of KFC and now it's how you get non-shitty pork chops that are cooked all the way through.

Yes you can get sick from it, you can also get sick from eating under cooked beef. You can get sick from eating it when it's cooked to shit. You can get sick just by using the same cutting board (washed or not) that you cut up meat on with your veggies. Food borne illness is just an inherent risk of eating food at all. The only thing I'm saying is everyone acts like eating it slightly pink and not solid white is going to almost definitely get them sick. It's not though. Not anymore than any other meat anyways. The most likely cause when someone DOES get sick is not adhering to standard safe food handling procedures.

I mean, I'll eat sushi all day long, but, translucent bird meat or pork, that's a no go for me.  Can't do it.  My pops was given a smoked salmon, this was probably 10 years ago.  They were eating little slices of it.  I cut a chunk off and put it in the skillet with some zesty italian.. it was great.  They thought I was nuts.  Maybe it's just me..  but I like my meats to make that switch..

I'll eat oysters raw, but I like them cooked better.  Sushi is great.  Whats that beef, kobi, where they slice it up real thin and serve it raw..?  Fuck that, Id rather flash fry it and,..you know, sandwich, burrito, anything.  I just cant do the pig thing..  to each their own right?  That's all it comes down too.

I ate raw hot dogs when I was a kid...  really dont knock the oven.. the juices from the skillet encrust the meat when all the water vapes off it..  I bet you, if I ever made you one of my "world famous pork chop, cube steak bakes"... you might not walk away upset, or hungry

Only two times I've caught food poisoning in my life, were both from seafood. (One from fish and the other crab cakes). I (understandably) now refuse to ever eat raw seafood, in fact I'm paranoid as fuck about it even when it's cooked. If I actually make fish, I cook it way loner than it should be. Food poisoning sucks ass so hard. You might as well take a bucket for the vomit, a pillow, some magazines, your laptop and some DVDs and go sit on the toilet for 2 days.

It's a possibility we're not both seeing the same thing when we discuss being undercooked. I would clarify with pictures but my internet is being stupid and making image search engines time out.

No, you can get sick if you don't know what the fuck you're doing. You should never eat under-cooked beef with ground beef from the supermarket, for example.

With beef, the bacteria only exists on the outside. That is why you can sear a piece of beef and have it be rare in the inside and it will be completely okay to eat.

With eggs, the salmonella only exists on the outer shell of the egg. The inside of the egg is sterile. That's why as long as you wash your eggs before cracking them, you can consume them raw.

Hot dogs are already pre-cooked though. I guarantee you if you ate a raw hot dog, things would not turn out well for you. In fact, that's how one of my friends from the 7th grade got food poisoning.

You know, it may be possible that you have some type of allergy to seafood. My ex was like that. We would both eat the same meal every night since we lived together, but whenever we both ate clams, he would get violently ill and have the same symptoms as food poisoning. Meanwhile, I'd have the exact same meal, and absolutely nothing would ever happen to me. I have an iron stomach.

Because fish really, is perfectly safe to eat raw or rare, it all depends on how it's been handled.

I prefer raw clams over anything else.

I've eaten horse sashimi raw in Japan, it's fucking delicious.

100% incorrect. Want to put your money illness on the line to prove that assertion? Throw a steak into a cabinet for a week, cook it, then eat it.

Spoilage for example (only even in part for that matter) come from the group you just said only exists on the outside of the meat. Once something has spoiled pretty well, you can't just cut off the top layers and have it good as new. As I said above, safe food handling procedures play the biggest role in food poisoning. Unless you are literally slaughtering and butchering your own animals, you have no idea at all if those procedures were actually followed. It doesn't matter if "you know what the fuck you're doing".

Your next response is probably going to either be "I can easily recognize spoiled meat" or "I would never eat cooked spoiled meat". Spoilage isn't always overly apparent. You can also go to someones house for a dinner and end up eating it.

Unless you are 100% in control of the process from getting a live cow to a steak on your table, yes even beef CAN make you sick.

For the second post: No, I eat seafood all the time. I'm not allergic to it. I'm really only wary of fish in particular. I'll eat tons of shrimp or crawfish with little concern. The texture of most the fish we can afford to eat, always has a certain raw feeling. There's a... (I really hate when I can't think of the word used to describe something.. Whatever the word is for either really liking or disliking the feeling of chewing/swallowing a food) to it that just instantly makes me paranoid and feel it's undercooked and I'm going to "die" from eating it, even when I know it's been cooked right.

I cant say Ive ever been somewhere they offer raw clams, usually they get steamed.  Atleast where Ive been.  I don't turn down much sea food.  I ate an octopus once, lol.. he was a little guy.  But I mean, I had to give it a go right?  Never know..

I havent had horse sashimi either, but there's some guys up the road that serve up slices of that blood red tuna.. its not bad.  It goes down pretty easy.  Im not familiar with horse, I imagine it to be a kind of a, chicken/beef cross... like a heavy turkey/chicken with a little red influence to it?

Ive not seen too many horses divided up so I can't really picture it..
