So it is spawn +11 today and I'm starting to wonder if all my peeking has slowed down colonization. There is much less condensation on the walls of the tub than there has been since it was spawned.
  Anybody think wax paper or bubble wrap might help? Also, I have yet to drill any holes in the tub. Could this be hampering the formation of knots?
  I'm probably just getting antsy and need to relax, but I would like to check in to make sure...

A faux casing is not going to help at all if you have not introduced fruiting conditions. That section I can see in the pic is fully colonized, I would fruit or case if the whole tub looks like that. I dislike bubble wrap or wax paper. If you want a killer pinset and plan on creating a microclimate to do that then use a proper casing and have an advantage with a good pinning platform as well. Otherwise just dial it in really good and fruit.

I couldn't get a good pic but there are a few spots where you can see primordia pushing up through the top layer of mycelium and the whole thing is knotting up nicely. I've got 5qts ready to spawn another on Thursday. Good times are right around the corner for me.

Yeah... it is a bit dry. Having slight issues getting things dialed in just right. I've been misting pretty heavily  the last two days so we'll see.

Add more polyfill to the top holes, not sure how your bottom ones look but they should be pretty tight.

I think pasty was spot on with the tip to kill the fan. Apparently last time I left the room my foot pulled the cord and had the fan pointed directly at one of my top holes. I've been misting heavily to recover. The tub is holding humidity pretty well otherwise...
