when: more or less right after the veil breaks and definitely before the cap flattens out. run your fingers around the cap's lip/edge. The more cureved/rolled the better. it loses flavor and medicinal value as the cap unrolls and planes out. do some homework. shiitake has 3 distinct grades (with 2 additional not so distinct grades). Donko, koko, and koshin. With Donko being the best and koshin being the crap. Most shiitake you find in the stores is lower Koko and Koshin. Donko has a very curved lips, no damage, and a characteristic folding of the cap that looks like a flower (molokodon(sp?)?). The cap folding is a result of temperature/humidity changes during fruiting.

how: grab the stem at the base and use a combination twisting/pulling motion. some people use a sharp knife to trim away any remains to prevent rotting.

Shittakes are best harvested well before the cap becomes plane.

I've read that a log will produce one year for every inch in diameter.

Soak 'em. Or water 'em with a sprinkler.

>what do i do after teh first flush to let it produce as many shrooms as posible?

After the flush give it a 10 days rest, then soak for 24 hours, then they should fruit again.
