Stages of popcorn hydration question

for those of you who have done the popcorn tek before, what stage of popcorn hydration do you want to acheive before you pc? Do you want the kernel to absorb enough water so that it splits it shell and doubles to triples in size and the inside starch is exposed and well hydrated? or do you want it to absorb just enough water so that the kernel just barely splits it's shell and is not much bigger than it is dry (i.e. when you mash it open, the inside is slightly moist and not fully hydrated)??

i do mine just before the kernel splits then drain and pc works great not to much water and not to little good luck you are gonna love pop corn

1.Thanks for the quick response fallenshroom. I was wondering, how long would that be anyway? Approx 1 hour or so?

2.Also, I've heard some like to wait until they split to allow the mycelium to invade the kernel more easily and also to allow the kernel to absorb more moisture. Thoughts anyone?

3.This may be a retarded question, but would it not be better to wait until the kernel has expanded as much as possible, meaning the kerenel has absorbed the maximum amount of water possible? I know the answer is 'no' but why?-is it because too much moisture, or does the meat of the kernel become somehow inferior from overcooking/oversaturating.

That is what I do. It takes approximatly 45 minutes to an hour of simmering in a pan to reach the stage I like. When most of the kernals are split and showing their guts is when I pull it off the heat. It is then drained and loaded into jars. The pressure cooking process dries the jars out a bit and cooks the kernals further.

You can make them really mushy if your not careful though. The jars that have too much water can colonize slowly, but the same is true for jars that are too dry.

I've also read different threads concerning the "splitting" of popcorn kernels. If I remember correctly there were some who were vehemently arguing that the split kernels are bad, and some going the other way. If I remember correctly ATWAR was a part of that discussion. To my monkey's experience, split kernels and non-split kernels do not colonize any slower or faster, 3 jars of each colonized at the _exact_ same speed and behaved the exact same way. If split kernels do allow for more contam like pysilly suggests, then I would say go for the intact kernal. Either way you should be fine, I think it is a personal perference, my monkey is yet to see any difference in bahavior.

like i said earlier soon as i see a kernel start to show sighns of splitting they are done just for the fact that i see water build up when there are mass split corn wich end bad when there is too much water

Thanks for all the replys. I guess there's only one way to find out for sure if there's the difference in colonizations times and overall yeild btwn split and whole popcorn substrates is substantial and that is to try both! 6 jars split kernels, 6 jars whole (or as close to whole as I can get-as soon as I see signs of splitting ala fallen). I will post the results, but I hardly think my results it will put the deabte to rest-teehee  :grin:

It is highly controversial whether Splitting is good or not. I know a kid who gets colonization in 2 weeks from spores, He cooks his popcorn a half hour, lets it sit in water for two days, then he simmers it for an hour then PC's it in jars with Tyvek filters. Make sure to use filters, you need air exchange with popcorn.
